1 cup butter
¼ cup white sugar
2 cups all-purpose flour
1 ½ cups shredded coconut
1 (14 ounce) can sweetened condensed milk
⅓ cup chopped red maraschino cherries
⅓ cup chopped green maraschino cherries
⅓ cup chopped walnuts
¼ cup golden raisins

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking pan.
  • Cream butter and sugar in a large bowl with an electric mixer. Blend in flour until mixture resembles coarse crumbs. Pat dough evenly into the prepared baking pan.

2 1/4 c flour
1/2 c sugar
1 c softened butter
2 eggs
1 c brown sugar
1/2 tsp salt
1 tsp baking powder
1/2 tsp vanilla
12 oz maraschino cherries, drained (save the juice) and chopped
1/2 c chopped walnuts (optional)
1 Tbsp soft butter for frosting
1 c powdered sugar for frosting

Steps:

  • 1. Preheat oven to 350 degrees. Mix flour, sugar, and butter until crumbly. Press into 9 x 13 pan. Bake for 20 minutes.
  • 2. Blend eggs, brown sugar, salt, baking powder, and vanilla. Stir in chopped cherries and nuts. Put on top of crust. Bake 25 minutes. Let cool.
  • 3. Frosting: Combine the 1 tablespoon soft butter 1 cup powdered sugar Add the saved cherry juice a little at a time until you get the right consistency to drizzle the frosting over the cooled bars.

1 cup cornstarch
1 cup almond meal
1/3 cup sugar
3/4 cup butter, softened
2 eggs, lightly beaten
1 cup firmly packed brown sugar
3 tablespoons rice flour
1 tablespoon tapioca starch
1 tablespoon potato starch
1/2 teaspoon xanthan gum
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla
10 ounces maraschino cherries, drained and chopped (reserve juice)
1/2 cup chopped walnuts (optional)
2 tablespoons butter, softened
2 1/2 cups icing sugar
1/2 teaspoon vanilla
3 -4 tablespoons reserved cherry juice
4 tablespoons flaked coconut (optional)

Steps:

  • Preheat oven to 350°F.
  • Line a 9X13 pan with tinfoil.
  • In a large bowl, combine all crust ingredients. Mix until crumbly and well combined and press into bottom of ungreased foil lined pan.
  • Bake for 15 to 20 minutes or until lightly brown.
  • In a small bowl, combine all filling ingredients and mix well.
  • Pour over crust and bake for 25 - 30 minutes or until a toothpick inserted in the center comes out clean. Cool.
  • Combine all frosting ingredients except coconut. Beat until fluffy and spread over cooled bars.
  • Sprinkle with coconut and cut into bars.

1 tsp baking powder
1 C coconut
2 (10 oz) jars maraschino cherries, drained and chopped coarse
1/2 C chopped pecans
Icing:
1/3 C butter, softened
1/2 tsp vanilla extract
3 C powdered sugar
4 Tbsp milk

Steps:

  • For the crust, combine flour, oats, brown sugar and baking soda in mixing bowl. Cut in butter until crumbly. Press into a 13x9x2-inch baking pan. Bake in a preheated 350 degree oven for 10 minutes. For the filling, beat eggs, brown sugar and vanilla together thoroughly. Combine flour and baking powder; stir into egg mixture, mixing well. Stir in coconut, maraschino cherries and pecans. Spread evenly over crust. Bake for 25 minutes or until lightly browned. Let cool completely. For the icing, combine butter, vanilla, powdered sugar and milk. Beat until smooth and creamy. Drizzle over bars.
