Number Of Ingredients 7

1 1/2 cups water
2 cups sugar
10 whole cloves
2 cups finely chopped dates
3 tablespoons lemon juice
1/4 cup blanched almond, finely chopped
1/4 cup walnuts, finely chopped

Steps:

  • Bring the water to a boil over medium heat.
  • Add the sugar and cloves and, stirring all the time, bring the water to a boil again.
  • Stir in the dates and turn the heat to low; then cook for about 10 minutes or until a paste is formed.
  • Add the lemon juice, almonds and walnuts; then cook for a few more minutes.
  • Remove and allow to cool; then store in a glass jar.

2 cups self raising flour
1 teaspoon bicarbonate of soda
1/2 teaspoon ground nutmeg
1 cup pitted dates, finely chopped
2/3 cup brown sugar, firmly packed
3/4 cup orange juice
1 large egg
60 g butter, melted
1 cup ripe mashed banana

Steps:

  • Grease a 14cmx21cm loaf pan, line base and long sides.
  • Combine flour, bicarb, and nutmeg in a large bowl. Stir in dates and brown sugar. Make a well in the centre, add juice, butter, egg, and bananas. Mix with a wooden spoon until smooth. Pour mixture into prepared pan.
  • Cook at 180C for about 1 hour.
  • Stand cake in pan for 5 minutes before turning out on a rack.
  • Serve warm or cold, with a little butter.
