1-1/2 cups half-and-half cream
3/4 cup sugar
2 cups heavy whipping cream
1 teaspoon walnut extract, optional
1/2 teaspoon vanilla extract
2 tablespoons maple syrup
1 cup chopped walnuts, toasted
HOT FUDGE SAUCE:
1 package (14 ounces) caramels
1/3 cup milk
1/2 cup semisweet chocolate chips
1/2 cup heavy whipping cream
1/4 cup chopped walnuts, toasted
1 teaspoon vanilla extract

Steps:

  • In a small saucepan, heat half-and-half to 175°; stir in the sugar. Cool quickly by placing pan in a bowl of ice water; stir for 2 minutes. Stir in whipping cream and extracts., Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer's directions. During the last 5 minutes, add half of the syrup and walnuts. Refrigerate remaining mixture until ready to freeze; repeat the process, adding remaining syrup and walnuts. Transfer to a freezer container; freeze for 2-4 hours before serving., In a heavy saucepan over medium heat, melt caramels with milk. Stir in chocolate chips until melted. 1 cup whole milk
2 eggs, lightly beaten
1/2 cup honey
2 cups heavy whipping cream
1-1/2 teaspoons maple flavoring
1/2 cup chopped walnuts, toasted

Steps:

  • In a small saucepan, heat the milk to 175°. Combine eggs and honey. Whisk in a small amount of the hot mixture to the egg mixture. Return all to the pan, whisking constantly., Cook over low heat until mixture coats the back of a metal spoon and a thermometer reads at least 160°, stirring constantly. Do not allow to boil. Remove from heat immediately. , Quickly transfer to a large bowl; place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes. Stir in cream and maple flavoring. 1 cup grade b maple syrup
2 cups heavy cream
1 cup whole milk
1/4 teaspoon salt
2 large eggs
1/3 cup walnuts, toasted and chopped

  • Boil syrup in a 2 quart heavy saucepan over moderately high heat until reduced to 3/4 cup, 5 to 10 minutes.
  • Stir in cream, milk and salt and bring to a boil over moderate heat.

1 ½ cups heavy whipping cream
5 egg yolks
1 ½ cups milk
2 tablespoons white sugar
1 tablespoon corn syrup
¾ cup maple syrup
⅛ teaspoon coarse salt
¼ teaspoon vanilla extract
1 ½ cups walnut halves
½ cup maple syrup
1 tablespoon maple syrup
1 pinch salt

Steps:

  • Pour cream into a large bowl and set a mesh strainer over the bowl. Whisk egg yolks together in a separate bowl.
  • Heat milk, sugar, and corn syrup together in a saucepan over medium-low heat until milk begins to steam, about 5 minutes. Slowly pour about 1/2 cup heated milk into the egg yolks, whisking constantly. Scrape egg yolk mixture into the saucepan with a heatproof spatula.

  • Heat the 1/2 cup plus 1 tablespoon maple syrup in a saucepan until it comes to a boil. Stir in walnuts, and return to a boil. Stir nuts for 10 seconds, remove from heat; set aside to cool completely. The nuts will be wet and sticky when cooled.
  • Remove cream mixture from the refrigerator, pour into your ice cream maker, and freeze according to manufacturer's instructions. During the last few minutes of churning, stir in wet walnuts.
