Tips:

  • Use high-quality maple syrup for the best flavor. You can find real maple syrup at most grocery stores.
  • If you don't have pistachio pudding mix, you can make your own by blending 1 cup of cooked pistachios, 1/2 cup of milk, 1/4 cup of sugar, and 1 tablespoon of cornstarch until smooth.
  • Be careful not to overmix the dough. Overmixing will make the cookies tough.
  • Chill the dough for at least 30 minutes before baking. This will help the cookies hold their shape.
  • Bake the cookies until the edges are golden brown and the centers are set. Overbaking will make the cookies dry.
  • Let the cookies cool completely before filling them. This will help prevent the filling from melting.
  • To make the cookies ahead of time, bake them according to the recipe and let them cool completely. Then, store them in an airtight container at room temperature for up to 3 days.
