MAPLE-ORANGE MASHED SWEET POTATOES

Maple-Orange Mashed Sweet Potatoes image

This recipe is from Cook's Illustrated and I made them today and it is fabulous! I omitted the pepper but stuck by the rest of the recipe. "Cutting the sweet potatoes into slices of even thickness is important in getting them to cook at the same rate. A potato masher will yield slightly lumpy sweet potatoes; a food mill will make a perfectly smooth puree. The potatoes are best served immediately, but they can be covered tightly with plastic wrap and kept relatively hot for 30 minutes. This recipe can be doubled in a Dutch oven; the cooking time will need to be doubled as well."

MINTY ORANGE/MAPLE SWEET POTATOES

Provided by Chef Pisces

Categories     Vegetable

Time 50m

Yield 1 1, 4-6 serving(s)

Number Of Ingredients 7

16 ounces 100% grade aaa pure maple syrup
1 pint orange juice
6 -8 organic sweet potatoes
1/2 pint heavy whipping cream
1 orange, peeled
marshmallows
1/2 cup fresh mint sprig

Steps:

  • Wash/run the sweet potatoes under cool water using colander, then pat dry with towels.
  • Next, thoroughly peel each sweet potato with a potato peeler.
  • Soak the peeled sweet potatoes in hot water overnight: (Sweet Potatoes are very fragile, boiling them causes bruising, and baking them dries them out. Letting them sit in hot water keeps them moist and is the most gentle way to get them to soften).
  • Remove softened sweet potatoes from the water and thoroughly pat dry with towels.
  • In a large mixing bowl, use a potato masher or fork to mash them gently.
  • Use an orange grater on the orange and add grated orange rind to the mixture.
  • Add the Maple, orange juice and whipping creme. Then, using an electric mixer on a low setting, gently mix till everything is a fluffy and whipped consistency -- no lumps!
  • Pour into an oblong baking dish and cover with foil, then bake at 325F for 20-25 minute.
  • Remove from the oven and add marshmallows to completely cover the top, then resume baking uncovered for about 5 minutes more, but be careful -- marshmallows burn very quickly and you only want them to be lightly golden brown, so keep checking.
  • Once the sweet potatoes are finally removed from the oven, add the fresh mint all around the perimeter of the sweet potatoes, and they will take on a slight mint flavor as they cool.

Tips:

  • Use a variety of sweet potatoes. While orange sweet potatoes are the most common, there are also white, purple, and even black sweet potatoes available. Each type of sweet potato has a slightly different flavor and texture, so feel free to experiment to find your favorite.
  • Choose sweet potatoes that are firm and free of blemishes. Avoid any sweet potatoes that are bruised or have soft spots.
  • Prick the sweet potatoes with a fork before baking. This will help them cook evenly.
  • Bake the sweet potatoes until they are tender when pierced with a fork. This will usually take about 45 minutes to an hour.
  • Let the sweet potatoes cool slightly before handling them. The skins can be very hot and delicate, so it's best to wait a few minutes before cutting or peeling them.
  • Serve the sweet potatoes with your favorite toppings. Some popular options include butter, cinnamon sugar, marshmallows, and maple syrup.

Conclusion:
