1 cup orange juice
½ cup dry white wine
½ cup maple syrup
2 teaspoons chopped fresh rosemary
½ teaspoon salt
½ teaspoon freshly ground black pepper
4 skinless, boneless chicken breast halves
2 tablespoons butter
2 tablespoons olive oil

Steps:

  • Bring orange juice and wine to a boil in a small saucepan. Reduce heat slightly, but keep high enough to continue a low boil for 5 minutes, stirring occasionally. Stir in maple syrup and continue boiling for another 5 to 6 minutes, stirring frequently, until glossy and just slightly thickened. Set aside.
  • In a small bowl mix together the rosemary, salt and pepper. Rub mixture on both sides of chicken breasts, and set aside.
  • Melt butter and olive oil in a large skillet over medium high heat. Add chicken breasts, cover skillet and saute for about 5 minutes on each side until lightly browned. Pour orange-maple mixture over chicken (mixture will boil and bubble). Reduce heat to simmer; cover and let cook for another 10 minutes, basting occasionally, until chicken is cooked through and sauce has turned into a rich, thick glaze.

2 tablespoons orange juice
Zest of 1 orange (about 2 tablespoons)

  • In a bowl, combine all ingredients. Mix until smooth.

Tips:

  • Mise en place: Before beginning, gather and measure all ingredients and equipment. This will ensure a smooth cooking process.
  • Fresh ingredients: Use fresh oranges for the best flavor. If possible, choose organic oranges to avoid pesticides and wax coatings.
  • Zest the oranges finely: Use a microplane or fine grater to zest the oranges. This will release the aromatic oils and provide a more intense flavor.
  • Simmer the glaze: Bring the glaze ingredients to a simmer over medium heat. This will help the flavors to meld and thicken the glaze.
  • Use a pastry brush: Apply the glaze to the chicken or fish with a pastry brush. This will help to evenly distribute the glaze and prevent it from dripping off.
  • Glaze multiple times: Apply the glaze several times during the cooking process. This will help to keep the chicken or fish moist and flavorful.
  • Rest the meat: Allow the cooked chicken or fish to rest for a few minutes before serving. This will help the juices to redistribute throughout the meat, resulting in a more tender and flavorful dish.
