3 1/2 cups all-purpose flour
1 cup whole-wheat flour
1 cup quick-cooking oats, plus additional for sprinkling
2 tablespoons baking powder
2 tablespoons granulated sugar
2 teaspoons salt
1 pound cold unsalted butter, diced
1/2 cup cold buttermilk
1/2 cup pure maple syrup
4 extra-large eggs, lightly beaten
1 egg beaten with 1 tablespoon milk or water, for egg wash
1 1/4 cups confectioners' sugar
1/2 cup pure maple syrup
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 400 degrees F. In the bowl of an electric mixer fitted with a paddle attachment, combine the flours, oats, baking powder, sugar and salt. Blend the cold butter in at the lowest speed and mix until the butter is in pea-size pieces. Combine the buttermilk, maple syrup and eggs and add quickly to the flour-and-butter mixture. Mix until just blended. The dough may be sticky.

¾ cup dried cherries
1 egg
¾ cup buttermilk
¾ teaspoon vanilla extract
3 cups all-purpose flour
½ cup rolled oats
1 tablespoon cornstarch
2 ½ teaspoons baking powder
½ teaspoon baking soda
⅜ teaspoon salt
¾ cup white sugar
2 tablespoons real maple syrup
½ teaspoon maple flavored extract
¾ cup unsalted butter
1 egg white
1 teaspoon white sugar

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a heavy duty baking sheet with parchment paper. To prepare fruit, cover with boiling water and let stand 5 minutes. Drain and dry with paper toweling.

Pat each piece into an 8 to 10 inch circle, 1/2 to 3/4 inch thick. Cut each circle into eight wedges. Place on baking sheet. Paint tops with beaten egg white and garnish with about 1 teaspoon of the sugar.
  • Bake at 425 degrees F (220 degrees C) for 15 to 18 minutes or until golden brown.
