Number Of Ingredients 7

2-1/3 cups water, divided
1 cup quick-cooking oats
2/3 cup packed brown sugar
3 tablespoons butter
1-1/2 teaspoons salt
2 packages (1/4 ounce each) active dry yeast
5 to 5-3/4 cups all-purpose flour

Steps:

  • In a large saucepan, bring 2 cups water to a boil. Stir in oats; reduce heat. Simmer, uncovered, for 1 minute. Stir in brown sugar, butter, salt and remaining water., Transfer to a large bowl; let stand until mixture reaches 110°-115°. Stir in yeast. Add 3 cups flour; beat well. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl; turn once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down; shape into 24 rolls. Place on greased baking sheets. These are great and simple Rolls from Southern Living Magazine. I do not claim to be a baker at all, but if I can make these anyone can and I always get rave reviews. The dough can also be used for yummy cinnamon rolls as well.Update: At one point I changed the recipe to canola oil instead of butter and added half whole wheat. Then a friend of mine made it and she substituted applesauce for the butter and she said it turned out great. I made it tonight with the applesauce and she was spot on!

1 cup quick-cooking oats
3 tablespoons margarine, canola oil or 3 tablespoons applesauce
4 1/2 teaspoons yeast
1/2 cup water
1 tablespoon sugar
4 cups all-purpose flour
1 1/2 teaspoons salt
1/3 cup packed brown sugar

Steps:

  • Bring 2 cups water to a boil in a medium saucepan; stir in oats and butter.
  • Boil, stirring constantly, 1 minute.
  • Remove from heat; let cool to 110 degrees.
  • Stir together yeast, ½ cup warm water, and 1 T.
