2 tablespoons vegetable oil
1/2 teaspoon ground cinnamon
1/2 teaspoon coarse salt
3 cups rolled oats (not quick-cooking)

Pastry for a 1-crust 9-inch straight-sided tart

3 eggs, ligthly beaten
1/2 cup molasses

1/2 cup chopped pecans

Steps:

  • Preheat oven to 425 degrees.
  • Roll out the pastry, fit it into a straight-sided tart shell, prick it and line it with a sheet of foil. Weight it with dry beans or pastry weights. Tips:

  • Use fresh pecans: Fresh pecans have a more pronounced flavor and a better texture than stale or old pecans. If you can, buy pecans that are still in their shells and crack them yourself just before using them.
  • Toast the pecans: Toasting the pecans before adding them to the maple-molasses mixture intensifies their flavor and gives them a slightly crunchy texture. You can toast them in a preheated oven at 350 degrees Fahrenheit for 5-7 minutes, or in a skillet over medium heat for 3-4 minutes, stirring constantly.
  • Use pure maple syrup: Pure maple syrup has a richer flavor and a more complex aroma than pancake syrup or corn syrup. Look for pure maple syrup that is Grade A or higher.
  • Use unsulfured molasses: Unsulfured molasses has a milder flavor than sulfured molasses, and it is also less bitter. Look for unsulfured molasses in the baking aisle of your grocery store.
  • Don't overcook the pecans: Overcooked pecans will be tough and chewy. Cook them just until they are coated in the maple-molasses mixture and have a slightly glossy appearance.

Conclusion:

Maple-molasses pecans are a delicious and versatile snack or treat. They can be enjoyed on their own, added to salads or yogurt, or used as a topping for desserts. They are also a great gift for friends and family. With just a few simple ingredients and a little bit of time, you can make your own delicious maple-molasses pecans at home.
