EASY MAPLE MASHED SWEET POTATOES

Easy Maple Mashed Sweet Potatoes image

The addition of maple syrup makes these pleasently different. This dish was always popular when I catered holiday dinners. I put a small amount of syrup here but you may certainly add more if you like. I have also cut it down as I doubt that very many folks will be having 100 at their table *wink*. Prep time is actually the mixing time after the potatoes have been baked. Also this can be made the day before and gently reheated (covered) before serving. **EDIT** After several reviewers commenting that the maple flavor is faint I have upped the maple syrup content on Jan 18 "07, please feel free to add more after tasting it if you would like to.

MASHED SWEET POTATOES WITH MAPLE AND BROWN BUTTER

Mashed Sweet Potatoes With Maple and Brown Butter image

This recipe is a grown-up take on sweet potatoes with brown sugar and marshmallows. A generous swirl of browned butter and maple syrup give the potatoes an earthy sweetness and great depth of flavor, while salted, toasted pecans sprinkled on top add a savory crunch. To save time on Thanksgiving, toast the pecans and make the brown butter up to a day in advance. Simply store the pecans in an airtight container, and the brown butter in the refrigerator. (Gently melt the butter in the microwave before using.)

Categories     dinner, vegetables, side dish

Time 35m

Yield 8 to 10 servings

Number Of Ingredients 7

4 pounds sweet potatoes, peeled and cut into 1-inch cubes
3/4 cup raw pecans (optional)
2 teaspoons kosher salt, plus more to taste
10 tablespoons unsalted butter (1¼ sticks)
1/2 cup whole milk
3 tablespoons maple syrup, plus more to taste
1/2 teaspoon black pepper, plus more to taste

Steps:

  • Bring a large pot of water to a boil. Add the sweet potatoes and cook, uncovered, stirring occasionally, for about 15 to 20 minutes, until very tender when pierced with a fork.
  • Meanwhile, toast the pecans (optional): Place the pecans in a medium sauté pan. Cook over medium-low heat, tossing often, for 3 to 5 minutes, until lightly toasted. Transfer to a cutting board, and roughly chop. Sprinkle generously with salt, and set aside. Wipe out the pan with a paper towel.
  • In the same pan, melt the butter over medium heat. Cook, watching carefully and stirring occasionally with a silicone spatula, until brown bits appear and the butter gives off a nutty aroma, about 3 minutes. Remove from the heat immediately. Carefully pour the melted butter into a small heatproof bowl, scraping the pan with a spatula to get all of the brown bits. Set aside.
  • Drain the cooked potatoes, and add them to the bowl of a stand mixer fitted with the paddle attachment. Add the milk, 3 tablespoons maple syrup, 2 teaspoons salt and pepper and mix on medium-low speed until the potatoes are creamy and smooth. Add the reserved brown butter and mix until just incorporated.
  • Transfer the potatoes to a shallow serving bowl, sprinkle with the reserved pecans, and drizzle with maple syrup. Serve warm. (The potatoes may be kept warm, covered, in a low oven for up to 30 minutes. Add the pecans just before serving.)

MAPLE-ORANGE MASHED SWEET POTATOES

Maple-Orange Mashed Sweet Potatoes image

This recipe is from Cook's Illustrated and I made them today and it is fabulous! I omitted the pepper but stuck by the rest of the recipe. "Cutting the sweet potatoes into slices of even thickness is important in getting them to cook at the same rate. A potato masher will yield slightly lumpy sweet potatoes; a food mill will make a perfectly smooth puree. The potatoes are best served immediately, but they can be covered tightly with plastic wrap and kept relatively hot for 30 minutes. This recipe can be doubled in a Dutch oven; the cooking time will need to be doubled as well."

MAPLE-MASHED SWEET POTATOES

Maple-Mashed Sweet Potatoes image

This recipe is from the www.sparkrecipes.com website: "It's the perfect time of year for this recipe! Sweet potatoes are one of the most delicious (and nutritious!) winter comfort foods, and the warm maple syrup flavor of this dish is the perfect complement to cold weather. Choose medium sweet potatoes with firm, unblemished skins - they'll have the best flavor!"

Provided by senseicheryl

Categories     Yam/Sweet Potato

Time 15m

Yield 4 side dishes, 4 serving(s)

Number Of Ingredients 5

1 lb sweet potato, peeled and cut into 2-inch chunks
2 medium carrots, thinly sliced
2 tablespoons maple syrup
1 pinch ground nutmeg
1 dash fresh ground black pepper

Steps:

  • Place the sweet potatoes and carrots in a medium saucepan. Add 1-inch water, cover, and bring to a boil over high heat. Reduce the heat to medium and simmer for 9 to 10 minutes, or until the vegetables are very tender.
  • Drain in a colander and return to the saucepan. Mash until smooth.
  • Stir in the maple syrup and nutmeg and pepper to taste.

Tips:

  • Choose the right sweet potatoes: Look for firm, unblemished sweet potatoes that are about the same size so they cook evenly.
  • Wash the sweet potatoes thoroughly: Scrub the sweet potatoes with a vegetable brush under running water to remove any dirt or debris.
  • Poke holes in the sweet potatoes: Use a fork to poke several holes in the sweet potatoes. This will help them cook more evenly.
  • Microwave the sweet potatoes: Place the sweet potatoes in a microwave-safe dish and microwave on high for 5-7 minutes per potato, or until they are tender. Be sure to flip the potatoes halfway through cooking.
  • Roast the sweet potatoes: Preheat your oven to 400 degrees Fahrenheit. Place the sweet potatoes on a baking sheet and roast for 45-60 minutes, or until they are tender. Be sure to flip the potatoes halfway through cooking.
  • Grill the sweet potatoes: Preheat your grill to medium-high heat. Place the sweet potatoes on the grill and cook for 15-20 minutes per side, or until they are tender. Be sure to flip the potatoes halfway through cooking.
  • Mash the sweet potatoes: Once the sweet potatoes are cooked, remove them from the oven or grill and let them cool slightly. Then, peel the sweet potatoes and mash them with a potato masher or fork. You can also use a food processor to mash the sweet potatoes if you prefer a smoother texture.
  • Add flavorings: Once the sweet potatoes are mashed, you can add a variety of flavorings to taste. Some popular options include butter, maple syrup, brown sugar, cinnamon, nutmeg, and vanilla extract.

Conclusion:

Maple mashed sweet potatoes are a delicious and versatile side dish that can be enjoyed with a variety of meals. They are also a good source of vitamins, minerals, and fiber.
