1 head garlic
1 pound ground lamb
6 ounces soft goat cheese
6 tablespoons minced chipotle peppers in adobo sauce
2 sprigs chopped fresh rosemary
2 tablespoons maple syrup
1 ½ teaspoons salt
½ teaspoon cracked black pepper
1 tablespoon olive oil
2 tablespoons maple syrup
4 ciabatta buns, split and toasted

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Cut the top off of the head of garlic, and place onto a small, oven safe dish.
  • Bake the garlic in the preheated oven until the cloves are soft and golden brown, about 1 hour. Remove from the oven, and cool. Once cool enough to handle, squeeze the roasted garlic into a mixing bowl. Add the lamb, goat cheese, chipotle peppers, rosemary, 2 tablespoons maple syrup, salt, and pepper; mix well. Form the mixture into 4 patties.
  • Heat the olive oil in a large skillet over medium-high heat. Sear the lamb patties for 1 minute on each side, then reduce the heat to medium-low, and continue cooking to your desired degree of doneness, about 2 minutes per side for medium-well. 1/2 cup chicken stock
1 1/2 teaspoons dried chipotle powder
1 teaspoon fresh thyme, chopped
2 teaspoons cornstarch
1 tablespoon water, cold
1 1/2 lbs pork cutlets, cut 3/4 inch thick
salt
pepper
1 tablespoon canola oil

Steps:

  • Preheat your grill. In a small saucepan, bring the first four glaze ingredients to a boil.
