ΒΌ cup maple syrup
2 tablespoons extra-virgin olive oil
4 teaspoons Dijon mustard

2 pears, peeled and chopped (toss with some lemon juice to keep them from discoloring if necessary)
1/4 cup thinly sliced red onion rings, halved (optional)
1/3 cup crumbled Gorgonzola cheese
2/3 cup Maple Candied Walnuts or Pecans (in a pinch, just toast some nuts), roughly chopped
For the Maple Candied Walnuts or Pecans:
1 tablespoon butter
1 tablespoon maple syrup
pepper to taste
1/2 cup pecan or walnut halves
For Maple Dijon Vinaigrette:
3/4 cup olive oil
1/4 cup cider vinegar
1/4 cup maple syrup
2 Tbsp Dijon mustard
1 Tbsp garlic, minced
pepper to taste
For Nordstrom's Champagne Vinaigrette:
1 tablespoon chopped shallot
1 tablespoon Dijon mustard
2 tablespoons sugar
1 teaspoon minced garlic
1/2 cup Champagne wine vinegar
1 1/2 cups salad oil
3/4 teaspoon salt
1/2 teaspoon white pepper

Steps:

  • To Make Candied Walnuts: Melt the butter in a pan Mix in the maple syrup and pepper Add the pecans and toss to coat Cook on medium low heat about 15 minutes. Stir every 5 minutes. Watch carefully so they don't burn. Turn out on aluminum foil and let cool for 5 minutes; break apart if necessary. To Make either Dressing: Mix all ingredients in bowl using wire whisk. Place greens on individual plates. Sprinkle chopped pears, nuts and gorgonzola on top of salad greens. Drizzle dressing over salad or serve on the side to suit individual tastes. Beautiful and delicious.

3 red beets with tops
3 yellow beets with tops
6 cups mixed spring greens
1/2 medium red onion, thinly sliced, separated into rings
1/3 cup crumbled feta cheese
1/4 cup walnuts, toasted
2 tablespoons maple syrup
2 teaspoons Dijon mustard
2 tablespoons white wine vinegar
1 teaspoon lemon juice
1/4 cup olive oil

Steps:

  • Preheat oven to 425 degrees. Cut the tops off the beets leaving about 2 inches of the stalk. Scrub beets well and wrap in foil with 2 beets of equal size in each packet.
  • Place on a baking sheet and bake in preheated oven until beets yield to gentle pressure; approximately 1 hour. Remove from oven, unwrap and allow to cool. When cool enough to handle, slip the skins off of the beets; set aside.
  • While the beets are roasting, place the maple syrup through lemon juice in a blender container. Blend until well combined. With blender running, drizzle in the olive oil and continue to blend until thickened.
  • To assemble the salad, place the greens in a large bowl and drizzle with a small amount of dressing, toss to coat. Divide the greens among 6 chilled plates. Quarter beets or if large cut in eights and divide among the plates, top with onion rings, sprinkle feta and walnuts over all.
  • Serve with addition dressing on the side.

I first made this to serve at our family reunion feast. I had prepared enough to fill a large roasting pan and nothing was left, not even a nut! Everyone loved it and requested the recipe before leaving, even my big brother! (as a side note, it's now the ONLY salad dressing he'll eat, on ANY salad!)

1/2 c maple syrup, pure
1/2 c dijon mustard
1/4 c brown sugar
1/2 c balsamic vinegar
1 1/4 c iceberg lettuce, torn
1 1/4 c romaine lettuce, torn
1 1/4 c baby spinach, torn
1/2 c carrot, matchstick cut
1/2 small red onion, cut into rings
1/2 c sweet red pepper, chopped
1/3 c apple, chopped
1/3 c mandarin orange pieces
1/3 c pecans (whole or chopped)
1 Tbsp sesame seeds, toasted
cooked chicken (optional)

Steps:

  • 1. Be sure to wash the fruits and vegetables and dry on paper towels before cutting.
  • 2. In a large bowl, mix your salad greens.
  • 3. Sprinkle the carrot, red onion, apple and mandarin orange pieces over the top (they can be mixed in if desired).
  • 4. Sprinkle your salad with the pecans and sesame seeds.
  • 5. For the dressing, in a shaker bottle, add the maple syrup, Dijon mustard, brown sugar and Balsamic Vinegar. Shake well to blend.
  • 6. Pour desired amount over your salad.
