Time 20m

Yield 4 servings (3/4 cup serving size)

Number Of Ingredients 4

4 navel oranges
2 tablespoons maple syrup
1 teaspoon fresh squeezed lemon juice
Pinch cinnamon

Steps:

  • With a vegetable peeler remove a 2 by 1-inch piece of zest from 1 of the oranges, being careful not to peel off any of the white pith. Cut into thin strips and set aside.
  • Cut about 1/2 inch off of the top and bottom each piece of fruit. Remove the peel and pith from each piece of fruit by standing it on its end and cutting down along the curve of the fruit. Slice the fruit into 1/4 inch thick rounds and arrange on a platter.
  • In a small bowl combine the maple syrup, lemon juice and cinnamon. Pour the dressing over the fruit, garnish with the zest and serve.

CITRUS SALAD WITH PISTACHIOS & MAPLE VINAIGRETTE

Citrus Salad with Pistachios & Maple Vinaigrette image

Provided by Nancy Fuller

Time 15m

Yield 6 servings

Number Of Ingredients 10

3 cups baby arugula
2 navel oranges, peeled and sliced
1 red grapefruit, peeled and sliced
1 avocado, diced
1/2 cup shelled roasted and salted pistachios, chopped
1/4 cup crumbled feta cheese
3 tablespoons extra-virgin olive oil
2 tablespoons white wine vinegar
1 tablespoon maple syrup
Kosher salt and freshly ground black pepper

Steps:

  • For the salad: Add the arugula to the bottom of a platter and top with the oranges, grapefruit and avocados. Sprinkle with pistachios and crumbled feta.
  • For the vinaigrette: Whisk together the olive oil, white wine vinegar, maple syrup and some salt and pepper.
  • Drizzle the dressing over the salad and serve.

Tips:

  • For the best flavor, use fresh citrus fruits. Look for oranges and grapefruits that are heavy for their size and have a bright color.
  • If you don't have a citrus zester, you can use a vegetable peeler to remove the zest from the oranges and grapefruits.
  • Be sure to slice the oranges and grapefruits thinly so that they are easy to eat.
  • If you are using a store-bought vinaigrette, taste it before adding it to the salad. You may want to adjust the amount of vinegar or oil to suit your taste.
  • Be creative with your toppings! You can add nuts, seeds, crumbled cheese, or even grilled chicken or fish to this salad.

Conclusion:

This maple citrus salad is a refreshing and delicious way to enjoy citrus fruits. It's perfect for a light lunch or dinner, and it's also a great way to use up any leftover citrus fruits you have on hand. The combination of sweet maple syrup and tart citrus is simply irresistible.
