This recipe is a great twist on my overnight oats recipe, especially if you prefer eating your oatmeal warm. Old fashioned oats are mixed with mashed banana, maple syrup, unsweetened applesauce, milk, and spices and baked to perfection. Split into four generous servings, this baked oatmeal keeps great in the fridge and is easy to reheat.

2 bananas (overripe)
1/4 cup unsweetened applesauce
2 tbsp maple syrup
1 1/4 tsp cinnamon (divided)
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp kosher salt
1 cup cashew milk (unsweetened, or almond milk or skim)
1.5 cups old fashioned oats
1 tsp sugar

Steps:

  • Preheat the oven to 375F.
  • Spray a small baking dish or casserole with cooking spray. I used an 8.5" x 11" 2.5qt casserole dish for this.
  • Add the overripe bananas to the bottom of a mixing bowl, and mash them with a fork.
  • Add the applesauce, maple syrup, 1 tsp cinnamon, baking powder, salt, and vanilla extract, and stir to combine.
  • Add the milk. Whisk together.
  • Add the oats. Fold in.
  • Pour the mixture evenly into the baking dish.
  • In a small bowl, combine the remaining 1/4 tsp cinnamon with the 1 tsp sugar. Sprinkle this mixture evenly on top of the oats.
  • Bake at 375 for 35 minutes.

5 tablespoons melted butter cooled
1/2 cup maple syrup
1 1/2 cups whole milk
2 large eggs
1 teaspoon vanilla extract
1 1/2 teaspoons baking powder
1 1/4 teaspoons cinnamon
1/4 teaspoon salt
3 cups quick-cooking oats

Steps:

  • Heat oven to 350 degrees. Butter a 9X9 inch baking pan and set aside.
  • To a large mixing bowl, add cool melted butter and maple syrup. Whisk together until smooth. Pour in milk and add eggs. Whisk together. Add in baking powder, cinnamon, and vanilla. Mix until well blended.

1/4 cup canola oil
1/2 teaspoon cinnamon
1/4 teaspoon salt
6 cups quick-cooking oats

Steps:

  • Mix first 4 ingredients in a small bowl or cup.
