Time 1h5m

Yield 8 servings

Number Of Ingredients 8

3 tablespoons unsalted butter, melted
1/4 cup maple syrup
2 tablespoons brown sugar
2 tablespoons brandy
8 ripe pears, either Anjou, Bartlett, or Comice
1/4 cup dried cranberries
2 cups fat-free vanilla frozen yogurt
1/4 cup granola

Steps:

  • Preheat the oven to 375 degrees F.
  • In a 13 by 9-inch baking dish, combine the butter, maple syrup, brown sugar, and brandy. Peel the pears, halve lengthwise, and remove the seeds with a melon baller or teaspoon. Add the pears to the baking dish and coat with the maple mixture. Arrange the pears cut-side down, and bake until tender, about 50 minutes, basting occasionally. Meanwhile, put the cranberries in a small bowl and cover with hot water; set aside until plump. Drain and coarsely chop the cranberries.
  • Transfer the pears to plates. Pour the baking juices into a small bowl, and whisk in 1 or 2 teaspoons of water to blend into a sauce. Top each pear with a small scoop of frozen yogurt, and scatter granola and cranberries over the pears. Drizzle the syrup over the top. Serve immediately.

MAPLE CHEESECAKE WITH ROASTED PEARS

Categories     Cheese     Pear

Yield 8

Number Of Ingredients 11

2 bars (8 ounces each) cream cheese, room temperature
3/4 cup pure maple syrup
1 cup cold heavy cream
2 tablespoons confectioners' sugar
1 Easy Press-In Pie Crust, made in a 9-inch springform pan with vanilla wafers
(6 ounces cookies (about 12 graham crackers, 46 vanilla wafers, or 30 chocolate wafers, such as Famous)
3 tablespoons sugar
1/4 teaspoon coarse salt
5 tablespoons unsalted butter, melted)
Nonstick cooking spray
2 medium pears, such as Bosc or Bartlett, sliced lengthwise 1/8 inch thick

Steps:

  • Crust: Use a dry, flat-bottomed glass or your fingers to press crumbs into the pie plate, forming a firm layer. Preheat oven to 350 degrees. In a food processor, pulse cookies until finely ground (you should have about 1 1/2 cups). Add sugar, salt, and butter and pulse until combined. Firmly press crumb mixture into bottom and up sides of a 9-inch pie plate. (If using a springform pan, press crumbs halfway up sides.) Bake until crust is dry and set, about 12 minutes. Let cool completely in plate on a wire rack before filling. In a large bowl, using an electric mixer, beat cream cheese on high until fluffy, about 3 minutes. Add 1/2 cup maple syrup; beat until smooth. In a medium bowl, beat cream and sugar on high until soft peaks form, about 3 minutes. With a rubber spatula, stir about one-third the whipped cream into cream cheese mixture, then fold in remainder. Transfer to crust and refrigerate until firm, 3 hours (or up to 1 day). Preheat oven to 450 degrees. Coat a parchment-lined rimmed baking sheet with cooking spray. Arrange pear slices in a single layer on sheet and brush with 2 tablespoons maple syrup. Roast until pears are soft, 20 minutes. Remove from oven and heat broiler. Brush pears with 2 tablespoons maple syrup and broil until browned in spots, about 4 minutes, rotating sheet frequently. Let cool. To serve, arrange pear slices, overlapping slightly, on cheesecake.

Tips:

  • Use high-quality ingredients: The quality of your ingredients will greatly affect the taste of your cheesecake. Use full-fat cream cheese, fresh eggs, and real maple syrup.
  • Don't overbeat the cream cheese: Overbeating the cream cheese can cause it to become grainy. Beat it just until it is smooth and creamy.
  • Bake the cheesecake in a water bath: This will help to prevent the cheesecake from cracking and will also ensure that it cooks evenly.
  • Chill the cheesecake thoroughly before serving: This will help the cheesecake to set and will also allow the flavors to meld together.
  • Serve the cheesecake with your favorite toppings: Some popular toppings include fresh fruit, whipped cream, and caramel sauce.

Conclusion:

This maple cheesecake with roasted pears is a delicious and elegant dessert that is perfect for any occasion. The cheesecake is creamy and flavorful, and the roasted pears add a touch of sweetness and complexity. Whether you're serving it to guests or enjoying it yourself, this cheesecake is sure to be a hit.
