This ground beef Manicotti adds a nice mix to the normal manicotti recipe with just beef and ricotta cheese.

8 ounces of uncooked manicotti shells.
1 tbsp olive oil
1 onion
3 cloves of garlic
1 pound of lean ground beef
1 tbsp of fresh parsley,
1 tbsp fresh oregano,
1 tbsp fresh basil
1 tsp fresh thyme.
1/2 cup of sweet red, yellow and orange peppers diced
1 cup of diced mushrooms
1 cup of small broccoli florets
15 oz of ricotta cheese
1 medium egg
salt and pepper to taste
1/2 cup of grated Parmesan reggiano cheese
14 oz marinara sauce
3/4 cup of shredded cheddar cheese.

Steps:

  • Cook the pasta in salted water as the box suggests. Preheat the oven to 400 degrees.
  • Meanwhile, heat the olive oil in a skillet and cook the onion, garlic, peppers and mushrooms until just lightly cooked. Add the spices and stir to combine. Set aside.
  • Using the same pan, cook the ground beef until lightly cooked. Add to the vegetable mixture.
  • Combine the egg with the ricotta cheese, Parmesan cheese, salt and pepper and mix well. Add the vegetables and meat mixture and stir to combine.
  • Put a little of the pasta sauce in the middle of a 9 x 13" pan. Fill each manicotti shell with the vegetable mixture and place on the sauce. Add more sauce to the top of the filled shells and then top with the grated cheddar cheese.
  • Cook for 20 to 25 minutes in a preheated 400 degree oven.

1 lb lean (at least 80%) ground beef
1 large onion, chopped (1 cup)
2 cloves garlic, finely chopped
1 jar (26 to 30 oz) tomato pasta sauce (any variety)
2 boxes (9 oz each) frozen chopped spinach, thawed
2 cups small curd cottage cheese
1 can (8 oz) mushroom pieces and stems, drained
1/3 cup grated Parmesan cheese
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper
2 cups shredded mozzarella cheese (8 oz)
2 tablespoons grated Parmesan cheese

Steps:

  • Cook and drain manicotti as directed on package using minimum cooking time (cooking for the minimum time helps prevent the shells from tearing while filling).
  • Meanwhile, in 10-inch skillet, cook beef, onion and garlic over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in pasta sauce.
  • Heat oven to 350°F. Spray 13x9-inch glass baking dish with cooking spray.
  • Squeeze thawed spinach to drain; spread on paper towels and pat dry. In medium bowl, mix spinach, cottage cheese, mushrooms, 1/3 cup Parmesan cheese, the nutmeg and pepper.
  • In baking dish, spread 1 cup of the beef mixture. Fill manicotti shells with spinach mixture. Place shells on beef mixture in dish. Pour remaining beef mixture evenly over shells, covering shells completely. Sprinkle with mozzarella cheese and 2 tablespoons Parmesan cheese.
  • Cover and bake 30 minutes. Uncover and bake 20 to 25 minutes longer or until hot and bubbly.

1 (32 ounce) jar spaghetti sauce

1 pound bulk Italian sausage
3/4 pound ground beef
2 garlic cloves, minced
2 cups shredded part-skim mozzarella cheese
3 ounces cream cheese, cubed
1/4 teaspoon salt
4 cups meatless spaghetti sauce, divided
1/4 cup grated Parmesan cheese

Steps:

  • Cook manicotti shells according to package directions. Meanwhile, in a large skillet, cook sausage and beef over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. 1 lb extra lean ground beef
1 egg, beaten
8 ounces grated part-skim mozzarella cheese
3 slices bread, cubed
3/4 cup 1% low-fat milk
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 (26 ounce) jar meatless spaghetti sauce
grated parmesan cheese

Steps:

  • Brown ground beef & drain.
  • Cook manicotti using package directions.
  • Do not drain. Run cold water over it until water in pan is cold; leave manicotti in water until needed.
