4 limes, juiced
2 tablespoons sriracha
1 teaspoon kosher salt, plus more for seasoning

1 bunch scallions, green and white parts, thinly sliced
4 sprigs mint, leaves torn
2 pounds ground beef
3 tablespoons teriyaki sauce
1 tablespoon sriracha
1 tablespoon grated fresh ginger
3 cloves garlic, finely grated
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
6 brioche hamburger buns, toasted
Vegetable oil, as needed
Mayonnaise, as needed
6 leaves green leaf lettuce
1 avocado, peeled and thinly sliced

Steps:

  • For the slaw: Toss the cabbage with the lime juice, sriracha, salt and pepper in a large bowl. Cover and chill until ready to serve.
  • Cut the mangos into spears. Reserve 12 spears for your burgers. Chop the remaining spears for your slaw. Add them to the slaw just before serving along with the scallions and mint and toss to finish.
  • For the burgers: Combine the ground beef, teriyaki sauce, sriracha, ginger, garlic, salt and pepper in a medium bowl. Mix with your hands until combined. Form into 6 patties roughly 3/4-inch thick and 4 inches in diameter.
  • Brush a grill, grill pan or skillet with vegetable oil and heat on medium-high. When nice and hot, add the patties and cook for about 4 minutes per side for medium-rare. Take them off the heat.
  • To build the burgers: Spread mayonnaise on the bottom bun. Season with salt and pepper. Place a lettuce leaf on top of the seasoned mayo and top it with a patty, 2 slices of avocado, 2 spears of the reserved mango and the bun lid. Repeat with the 5 other burgers. Serve the slaw on the side.

1 tablespoon garlic powder
1 tablespoon onion powder
2 boneless chicken breasts
1 cup mango puree
1 tablespoon honey
1 teaspoon sriracha
1 lime, juiced
1/2 bottle beer, such as Red Stripe
Kosher salt and freshly cracked black pepper
Caribbean Mango Slaw, recipe follows, for serving
3/4 cup olive oil
3 tablespoons honey
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon sriracha
1 lime, juiced
Kosher salt and freshly ground black pepper
2 cups shredded carrots
1 cup fresh Italian parsley leaves, chopped
1/2 cup fresh mint leaves, cut into chiffonade
1 head napa cabbage, thinly sliced
1 cup chopped almonds (reserve some for garnish)

Steps:

  • Combine the jerk seasoning, garlic powder and onion powder in a small bowl. Rub the chicken with the jerk mixture (do not over season, or the dry rub will cake up and become too thick) and marinate, refrigerated, at least 1 hour and up to overnight.
  • Combine the mango puree, honey, sriracha, lime juice, beer and some salt and pepper in a small saucepan and heat until the mixture comes to a boil; set aside.
  • Preheat a grill or grill pan to medium-high heat. Add the chicken and cook without moving for 3 minutes. Flip over and brush lightly with the mango glaze. Continue cooking until cooked all the way through (to an internal temperature of 165 degrees F), about another 3 minutes. Remove from the grill and brush with more glaze. Tent loosely with foil to keep warm. Serve with Caribbean Mango Slaw.
  • Combine the olive oil, honey, vinegar, mustard, sriracha, lime juice and salt and pepper to taste in a large bowl and whisk until well blended. Add the carrots, parsley, mint, cabbage and most of the almonds and mango and toss until well coated. Transfer to a serving bowl and garnish with the remaining almonds and mango.

6 ounces button mushrooms, trimmed, coarsely chopped
2 limes
1/2 cup Greek-style plain full- or low-fat yogurt
3 tablespoons coarsely chopped cilantro, plus whole leaves for serving
2 medium carrots (about 4 ounces each), peeled
1 medium mango, thinly sliced
5 ounces baby spinach (about 4 packed cups)
4 (10") flour tortillas
2 cups shredded Monterey Jack cheese (about 8 ounces)

Steps:

  • Preheat oven to 425°F. Stir cumin, 3 Tbsp. oil, 1 tsp. salt, and 1/2 tsp. pepper in a large bowl. Add chicken and mushrooms and toss to coat. Spread on a rimmed baking sheet and roast until an instant-read thermometer inserted into thickest part of thigh registers 165°F, 15-17 minutes.

1 tablespoon chili garlic paste recommended: Sambal)
1 tablespoon lemon zest (preferably organic)
2 tablespoons finely minced ginger
2 tablespoons finely minced garlic
2 tablespoons toasted sesame oil
1/3 cup dark brown sugar
1/2 cup ponzu (citrus seasoned soy sauce)
Kosher salt and freshly ground black pepper
1 pound flank steak
1 teaspoon canola oil

Fennel Slaw, recipe follows
Radicchio, romaine, frisee or mixed baby greens, for serving
Your favorite vinaigrette, for salad
Sliced red onion, tomato and avocado, for serving, optional

2 ripe mangoes, peeled, seeded, and coarsely chopped
1 tablespoon seasoned rice wine vinegar
1 tablespoon chili garlic paste (recommended: Sambal)
1/2 cup marinade reserved from flank steak
1 lemon, juiced (about 2 tablespoons)
1/4 cup extra-virgin olive oil
1 1/2 tablespoons honey
1 teaspoon lemon zest (preferably organic)
1/2 teaspoon salt
1/2 teaspoon black pepper
2 large fennel bulbs
Black sesame seeds, for garnish

Steps:

  • Combine all ingredients for the marinade in a bowl and mix well. Place steak in a plastic storage bag, add the marinade, remove as much air as possible and refrigerate overnight. Preheat grill pan over medium-high heat. Remove steak from marinade bag and remove as much of the marinade as possible. Reserve 1/2 cup marinade for barbeque sauce. Season the steak with kosher salt and pepper. Brush grill pan lightly with canola oil, grill steak for 2 1/2 minutes, rotate on same side 45 degrees (to create grill marks) and grill for another 2 1/2 minutes. Flip steak and cook for an additional 5 minutes on the other side, rotating 45 degrees after 2 1/2 minutes. Remove from grill pan and allow the steak to rest for 10 minutes under a foil tent. Slice steak against the grain as thinly as possible. To serve, toss salad and optional red onion, tomato and avocado with vinaigrette of your choice and arrange on a serving platter. Place a heap of fennel slaw in the center of salad, then place sliced meat around the sides (I fold the sliced meat in a slight V shape to show as much of the caramelization of the outside of the meat). Drizzle meat with barbeque sauce and mango puree carefully ensuring that the sauce gets onto the salad greens and slaw (use more barbeque sauce than mango puree).
  • Puree mangos in a blender. Add rice wine vinegar and chili garlic paste and blend until all ingredients are incorporated (the color should be a bright orange-red). Bring marinade to a boil. Lower heat to medium-low and reduce to about half (about 10 minutes over medium-low heat). The sauce can be strained at this point to remove the bits of garlic and ginger (the flavor is slightly less intense but it makes for a nicer presentation). Add about half of the mango puree (approximately 2/3 cup) and cook for another 2 minutes. Set aside. Save the other half of the mango puree for garnish.
  • Place lemon juice in a bowl and whisk in olive oil to create an emulsion. Add honey, zest, salt and pepper and whisk until combined; set aside. Slice fennel very thinly with a mandolin. Combine fennel and dressing and set aside until ready to serve. Re-season with salt and pepper, to taste, and sprinkle with black sesame

1 large green mango, peeled and shredded
1 teaspoon soy sauce
1 dash black pepper
1/4 cup fish sauce

Steps:

  • Rub soy sauce on both sides tofu and sprinkles with black pepper
  • Cook marinated tofu on hot grill till both sides golden brown.
  • Put shredded mango on a plate, places grilled tofu on top mango.

2 cups shredded carrots
1 1/2 cups shredded zucchini
