GRILLED SALMON WITH A PINEAPPLE, MANGO AND STRAWBERRY SALSA

Grilled Salmon With a Pineapple, Mango and Strawberry Salsa image

Fresh Salmon is just the best. I go fishing in Alaska once a year and bring home a fair amount. Testing different peoples recipes is great. This one is from EMERIL. I keep some of his Essence on hand at all times. The fruit salsa is so refreshing and a great summer time addition to the fish. I have not tried it on other fish but I am sure it would be great.

Caribbean Salmon W/ Guava Barbecue Sauce and Mango Veggie Salsa image

I'm always looking for a new way to use guava paste, as I seem to always have a good lot of it around. This is a nice twist on the typical old salmon dish--in that it offers a slightly sweeter taste than I am used to. From Simply Delicioso.

Steps:

  • In medium bowl, mix lime juice, honey and salt; toss with remaining salsa ingredients. Cover and refrigerate at least 1 hour. Meanwhile, soak cedar plank in water at least 1 hour.
  • Heat coals or gas grill for direct heat. Place salmon, skin side down, on cedar plank. Make diagonal cuts in salmon every 2 inches, without cutting through the skin. Rub brown sugar over salmon.
  • Place cedar plank with salmon on grill. When cedar plank begins to smoke, cover grill. Cover and grill salmon over medium heat 30 to 35 minutes or until salmon flakes easily with fork. Remove salmon from plank, using large spatula. Serve with salsa.

SALMON WITH CORIANDER/CILANTRO MANGO SALSA

Salmon With Coriander/Cilantro Mango Salsa image

This is very versatile it can be served as a main course with a salad for a light, healthy summer time meal or it can be served as a appetizer, or as part of a buffet style meal along with other dishes. I have made this a few times now both as a main and also as part of a BBQ when I had 40 people over, it is always received well. I have listed the weight below as 1kg and I feel this would serve 4-5 as a main with a nice green salad and some crusty bread and about 10 as an appetizer or as part of a buffet style meal. Cooking time does not including resting time or chilling time if you choose that option.

We try to eat salmon twice a week so I'm always trying to mix up the flavors. This one came to me after I actually had some coconut shrimp and was like "why haven't I put this on salmon before?!" enjoy :)

MANGO SALSA TOPPING
2 mangos, peeled and diced
3 roma tomatoes, diced
1/2 bunch chopped cilantro
1-2 limes, juiced
1/2 c red onion, chopped
2 serrano peppers, finely chopped, seeds removed
1 Tbsp dijon mustard
1 tsp dried oregano
1 drizzle of siracha, hot red chili sauce
1 Tbsp garlic, chopped
1 tsp powdered ginger, can sub fresh minced ginger if you have it.
1 tsp chili powder
salt/pepper to taste
FOR THE SALMON
3/4 lb salmon filet, skin on
1 c coconut, shredded
1 tsp of each-chili powder, garlic powder, onion powder

Steps:

  • 1. In cold water, rinse the salmon and rub off any loose scales, then lightly pat dry the flesh of the salmon. Add salt and a light coat of pepper to each filet.
  • 2. In a bowl, toss together the coconut, chili powder, garlic/onion powder and some more salt and pepper until the coconut is basically coated with chili powder
  • 3. Sprinkle and pat the coconut mixture on the flesh of the salmon heavily and wrap tightly in plastic wrap, refrigerate for about 30 minutes and up to 2 hours to secure the coconut on the fish.
  • 4. While the crust is setting, you have time to make the salsa. start by adding all of the chopped ingredients to a bowl. (mangos, tomatoes, cilantro,a nd onion)
  • 5. Then add the remainder of the seasonings to the bowl and stir, taste on a chip or a spoon to see if you want to make it more spicy or salty. If not, refridgerate until the salmon is ready.
  • 6. After the salmon has set, heat up a large saute pan or grill pan to medium high. Drizzle some olive oil in the pan and place the fish coconut side down for about 6 minutes(until it's golden). Try not to move it until you flip so you don't scrape off the coconut.
  • 7. After you've flipped the salmon, let it cook for another 8 or so minutes, or until the skin is basically torched and will peel right off the fish. Make sure you DO NOT cover the fish for any reason as this will make the coconut soggy.
  • 8. So you don't freak out--the salmon skin WILL be burned. After peeling the skin from the bottom of the fish you can sit it on a bed of rice ( I like to mix a boil in a bag rice with the remainder of the cilantro, a little lime juice, some powdered ginger, salt and pepper)
  • 9. Drop a hefty scoop of the mango salsa on the salmon and serve. The salsa is great leftover with tortilla chips too! Promise to make this soon! I make it for my boyfriend all the time and it blows him away!

Tips:

  • Choose ripe mangoes: Use ripe mangoes for the salsa, as they will be sweeter and more flavorful.
  • Use fresh ingredients: Fresh ingredients will give the salsa the best flavor. If you can, use fresh cilantro, tomatoes, and onions.
  • Adjust the spiciness: The amount of jalapeño pepper you add to the salsa will determine how spicy it is. If you don't like spicy food, you can omit the jalapeño pepper or use a milder pepper, such as a bell pepper.
  • Make the salsa ahead of time: The salsa can be made ahead of time and stored in the refrigerator for up to 3 days. This makes it a great option for a quick and easy meal.
  • Serve with your favorite foods: Mango salsa is a versatile condiment that can be served with a variety of foods, such as grilled fish, chicken, or tacos.

Conclusion:

Mango salsa salmon is a delicious and healthy meal that is perfect for a summer dinner. The sweet and tangy mango salsa pairs perfectly with the flaky salmon. This dish is also easy to make and can be prepared in under 30 minutes. So next time you are looking for a quick and easy meal, give mango salsa salmon a try. You won't be disappointed!
