Tips:

  • Choose ripe mangoes: Use ripe mangoes for a sweeter and more flavorful stir-fry. Look for mangoes that are slightly soft to the touch and have a deep yellow color.
  • Tenderize the pork: To make the pork more tender, you can marinate it in a mixture of soy sauce, rice wine, and cornstarch for at least 30 minutes before cooking.
  • Use a hot wok or skillet: A hot wok or skillet will help to sear the pork and prevent it from sticking. Make sure to heat the wok or skillet over high heat before adding the oil.
  • Stir-fry in batches: If you are cooking a large amount of pork and vegetables, stir-fry them in batches to prevent the wok or skillet from becoming overcrowded. This will help to ensure that the food cooks evenly.
  • Add the sauce towards the end: Adding the sauce towards the end of the stir-fry will help to prevent it from burning. Bring the sauce to a simmer in a separate saucepan before adding it to the wok or skillet.
