- 2 mangoes pitted and cut in 1/4" cubes or smaller.
- ½ a pineapple cut in 1/4" cubes or smaller.
- 1 cucumber seeded and cut in 1/4" cubes or smaller.
- 1 or 2 Habanero seeded and finely chopped(wear gloves)( if you use 2 watch out, Have a gallon of milk handy).

- Combine the Jerk Spice ingredients in a small bowl and mix to form a coarse paste. Or blend in food processor.
- Coat pork tenderloin and Marinate at least 4 hours or overnight. The longer it marinates, the more flavor the pork absorbs.

- Clean each shrimp by removing the head with a twisting motion. Cut along the back of the shell with kitchen shears or a sharp paring knife, and peel off the shell, removing the legs with the shell. It's sweetness complements the spiciness of another dish very well....for example, It went really well with our ZWT3 team's jerk recipe!
