Tips:

  • For the best flavor, use ripe mangoes. Look for mangoes that are yellow or orange in color and slightly soft to the touch.
  • If you don't have graham cracker crumbs, you can make your own by crushing graham crackers in a food processor or blender.
  • You can also use a pre-made pie crust for this recipe. If you do, be sure to pre-bake it according to the package directions.
  • To make the filling, simply combine the mango, lime juice, sugar, and cornstarch in a saucepan and cook over medium heat until thickened. This should take about 5 minutes.
  • To make the whipped cream, simply beat the heavy cream and powdered sugar together until stiff peaks form.
  • When assembling the pie, start by spreading the graham cracker crumbs in the bottom of a 9-inch pie plate. Then, pour the mango filling on top. Finally, top with the whipped cream.
  • Refrigerate the pie for at least 4 hours before serving. This will allow the flavors to meld and the pie to set.
