Tasty and unusual Thai salad with green mangoes and succulent prawns - or, you could even use Granny Smith's apples

Provided by Mary Cadogan

Time 25m

Yield Serves 6, with other dishes

Number Of Ingredients 12

2 tbsp lime juice
1 small red chilli , seeded and finely chopped
2 tbsp fish sauce
1 tbsp light muscovado sugar
3 shallots , finely sliced
85g roasted salted peanuts , finely chopped
2 green mangoes or 3 Granny Smith apples
2 tbsp chopped mint
1 tbsp sunflower oil

Tips:

- **Choose ripe and flavorful mangoes**: Look for mangoes that are slightly soft to the touch and have a sweet aroma. Avoid mangoes that are too hard or have green skin, as they will be less flavorful. - **Use a variety of apples**: This recipe calls for Granny Smith apples, but you can use any type of apple that you like. Some other good options include Honeycrisp, Fuji, or Pink Lady apples. - **Dice the apples and mangoes into small pieces**: This will help them to absorb the dressing and make them easier to eat. - **Use fresh herbs**: Fresh herbs, such as cilantro and mint, add a lot of flavor to this salad. If you don't have any fresh herbs on hand, you can use dried herbs, but they won't be as flavorful. - **Make the dressing ahead of time**: The dressing for this salad can be made up to 24 hours in advance. This makes it a great option for a quick and easy weeknight meal. - **Serve the salad immediately**: This salad is best served immediately after it is made. The apples and mangoes will start to brown if they sit for too long.

Conclusion:

This mango green apple salad is a light and refreshing salad that is perfect for a summer meal. It is made with fresh mangoes, apples, red onion, cilantro, mint, and a tangy lime dressing. This salad is easy to make and can be served as a side dish or a main course. It is also a great way to use up any leftover mangoes or apples you have on hand.
