1/2 cup fresh cream
1 medium sized mango ((1/2 cup mango puree))
1 tbsp sugar
3/4 tsp lemon juice

Steps:

  • Chop the mango, reserve 1 tbsp of chopped mango and take the rest in a blender, add sugar and lemon juice to it. Blend to make a puree.
  • To a mixing bowl add fresh cream, Whisk well until thick and peaks are soft. I used my hand mixer.
  • Add 1/4 cup mango puree to it reserving 1/4 cup. Mix well.
  • Take your serving glasses, first add mango puree as first layer just a tbsp or 2 for each cup.
  • Then spoon fresh cream mango mixture and add it till 3/4 of the cup.
  • Finally add chopped mangoes as garnish. Spoon some reserved mango puree over it. And finally done.
  • Refrigerate for an hour then serve Mango Fool.

1 cup (8 ounces) chopped mango (fresh or frozen and defrosted is fine)
1 TB fresh orange juice
1 TB lime juice
1/4 cup sweetened condensed milk
3/4 cup heavy cream (very cold)

Steps:

  • In a high speed blender, combine the mango with the orange juice, lime juice and condensed milk. Puree until very smooth, about 1 minute.
  • Meanwhile, in a medium-sized bowl, beat the cream with an electric mixer on high until soft peaks form.
  • Pour one quarter of the mango puree mixture into the beaten cream, and using a spatula, fold the mango into the cream very gently. You don't want to deflate the cream, so take your time and scrape around the bowl and down the middle to fold the mixture together.
  • Repeat with the remaining mango puree, one quarter of it at a time, until everything is incorporated.
  • Divide the mixture between 4 small glasses, and refrigerate at least 4 hours (or overnight) before serving. To garnish: extra dollop of whipped cream and a few diced mango pieces and a mint leaf.

2 large ripe mangoes
4 passion fruits , halved
2 x 150g/5oz tubs Greek yogurt (use low-fat if you prefer)
juice 1 lime

Steps:

  • Peel the mangoes using a vegetable peeler. Slice the cheeks off one and cut into small dice. Set aside.
  • Cut the flesh from the remaining mango and stone, then purée flesh in a liquidiser. Squeeze out the seeds from 2 of the passion fruit halves and mix with the mango purée. Add lime juice to taste. Gently fold the yogurt and half the diced mango through the fruity purée.
