MANGO, CORN, AND BLACK BEAN SALSA

Mango, Corn, and Black Bean Salsa image

My neighbor introduced me to this cool dish that can stand alone as an easy side dish or tastes great with chicken made up as fajitas. This is a recipe that can be altered to use up other fruits you have on hand. I have used a mix of mangoes and peaches to make this, and it would probably taste great with pineapple or other tart fruits, but if you like mangoes as much as I do, you will want to let that flavor dominate. Optional to chill before serving.

Tips:

  • Choose ripe and sweet mangoes: The quality of the mangoes used will greatly impact the flavor of the salsa. Look for mangoes that are fully ripe, with a deep yellow or orange color and a slightly soft texture. Avoid mangoes that are green or have bruises or blemishes.
  • Use fresh corn: Fresh corn on the cob is the best choice for this salsa, but frozen corn kernels can also be used if fresh corn is not available. If using frozen corn, be sure to thaw it completely before adding it to the salsa.
  • Chop the ingredients evenly: For the best texture, chop all of the ingredients into uniform pieces. This will help them to distribute evenly throughout the salsa and ensure that each bite has a good balance of flavors and textures.
  • Use a sharp knife: A sharp knife will make it easier to chop the ingredients evenly and prevent them from becoming bruised or crushed.
  • Don't overmix the salsa: Once the ingredients are combined, stir them together gently until they are evenly distributed. Overmixing can make the salsa watery and bland.
  • Serve the salsa chilled: Mango corn salsa is best served chilled, so be sure to refrigerate it for at least an hour before serving. This will help the flavors to meld and develop.

Mango corn salsa is a refreshing and flavorful salsa that is perfect for summer gatherings. It is easy to make and can be customized to your own taste preferences.
