BLACK BEAN MANGO SALSA
I love this salsa! It makes for a perfect summer appetizer. I particularly like that it has black beans for extra protein. When served over grilled chicken, it is even better.

MANGO, CORN, AND BLACK BEAN SALSA
My neighbor introduced me to this cool dish that can stand alone as an easy side dish or tastes great with chicken made up as fajitas. This is a recipe that can be altered to use up other fruits you have on hand. I have used a mix of mangoes and peaches to make this, and it would probably taste great with pineapple or other tart fruits, but if you like mangoes as much as I do, you will want to let that flavor dominate. Optional to chill before serving.

BLACK BEAN MANGO SALSA
This is such a great salsa recipe. So delicious, fresh and so tantalizing to your taste buds. I make it many times during the summer and it is BEST to use all the freshest fruits/veggies as you can. Especially the mangoes and lime juice. I usually go to the local fruit stands to buy the mangoes, not sure where they are grown, but they are so much better than the local grocery store. It's also great over chicken, or enchiladas!!

BLACK BEAN MANGO SALSA
This delicious salsa adds a new twist to soft tacos and burritos! I got the recipe last year, and it has quickly become a staple in our house! We eat it in burritos with shrimp or chicken, sour cream, and spanish rice and the rest of the regular fixin's. Also surprisingly good on salmon! If you want to give it some kick, chop up a jalapeno pepper and throw it in there!

SPICED TILAPIA WITH MANGO BLACK BEAN SALSA
From Fine Cooking's "Cooking Fresh." This salsa is wonderful and versatile. Even though this recipe is for 2 servings, I suggest you make the whole batch of salsa (Recipe #230800) and store it for other dishes. It is obviously easier to make in larger batches. Try this spice rub on chicken or grilled chops as well!

SWEET & SPICY MAHI-MAHI W/MANGO & BLACK BEAN SALSA
Steps:
- Preheat your grill at medium high heat. Begin by making the marinade for the mahi-mahi. Combine in a small bowl the jerk seasoning, pineapple juice, cayenne and cumin. Pour over the mahi and make sure the steaks are evenly coated. Set aside and start making your salsa. In a medium bowl, take the mango and cut the fruit into a small dice. Add your strained and rinsed black beans to the bowl, along with jalapeno pepper, red onion, lime juice, and mint. Gently toss with a spoon to combine and flavor with salt and pepper. Set aside but keep the salsa at room temperature. Take your sweet potatoes and cut them into 1/2' rounds. Toss with olive oil, salt and pepper until lightly coated. When ready, place the sweet potatoes directly on the grill rack. Grill on one side for about 8-10 minutes. When you flip them over, add your fish steaks to the grill also. Cook steaks on one side for approximately 5-7 minutes. Flip them over (very carefully) and at that time your potatoes should be fork tender and ready to take off the heat. When fish is done, remove from grill. Serve each steak with 1/4 salsa and the grilled sweet potatoes.

BARBADOS BLACK BEAN CAKES WITH MANGO SALSA
Steps:
- Salsa: Combine all the salsa ingredients in a bowl. Set aside Bean Cakes: Place the beans in a large bowl and coarsely mash them until they stick together. Add the cilantro, onion, egg white, cumin, garlic, allspice and cayenne. Mix until well blended. Divide the mixture into 8 equal parts. Shape into 1/2 inch thick patties. Coat the patties with bread crumbs. Spray both sides with nonstick cooking spray. Heat the oil in the skillen over medium high heat. Add the bean cakes and fry until golden brown on both sides, turning once, about 8 minutes total. Serve warm with the mango salsa. Garnish with cilantro and lime wedges.
Tips:
- Choose ripe mangoes: The riper the mangoes, the sweeter and more flavorful the salsa will be. Look for mangoes that are slightly soft to the touch and have a deep yellow or orange color.
- Use fresh black beans: Canned black beans can be used in a pinch, but fresh black beans will give the salsa a more vibrant flavor and texture. If using dried black beans, be sure to soak them overnight before cooking.
- Chop the ingredients evenly: This will help ensure that the salsa has a consistent texture and flavor. Aim for pieces that are about 1/4 inch in size.
- Don't overmix the salsa: Once the ingredients are combined, stir them gently to combine. Overmixing will make the salsa mushy.
- Chill the salsa before serving: This will allow the flavors to meld and develop. The salsa can be served immediately or stored in the refrigerator for up to 3 days.
Conclusion:
Mango black bean salsa is a delicious and versatile dish that can be enjoyed as an appetizer, side dish, or main course. It is a great way to use up ripe mangoes and is a healthy and refreshing option for any occasion. With its sweet, tangy, and savory flavors, mango black bean salsa is sure to be a hit with everyone who tries it.
