I have used a mix of mangoes and peaches to make this, and it would probably taste great with pineapple or other tart fruits, but if you like mangoes as much as I do, you will want to let that flavor dominate. 1 jalapeno
2 ripe mangoes
1 15-ounce can no-salt-added black beans
1 teaspoon dried coriander
1 teaspoon ground cumin
1 tablespoon white wine vinegar
2 nonfat whole-wheat flour tortillas
1 small bunch cilantro to yield 1/4 cup chopped

Steps:

  • Turn toaster oven to 350 degrees.
  • Chop whole onion.
  • Heat nonstick pan until very hot. Reduce heat to medium-high and add oil. Saute onion until it begins to soften.

3 small limes, juice and zest of
3 -4 tablespoons olive oil
2 garlic cloves, minced
1/2 teaspoon cumin
1/2 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
sea salt & freshly ground black pepper, to taste
1/4 cup fresh cilantro, chopped
4 boneless skinless chicken breasts, trimmed of any fat
2 large ripe mangoes, peeled and chopped
1 (8 ounce) can black beans, drained and rinsed
2 green onions, chopped
1 jalapeno, chopped (I removed the seeds and veins)
1 handful fresh cilantro, chopped
1 teaspoon cumin
1 large lime, juice of
corn tortilla, warmed
Cotija cheese
sour cream
guacamole

Steps:

  • Place first 8 ingredients in a large zip lock back and combine thoroughly. Add the chicken breasts and mix until the breasts are evenly coated. Place in the refrigerator to marinate for 2-4 hours.
  • Peel and chop the mango. Rinse and drain the black beans. Chop the green onions, jalapeno and cilantro. In a small bowl, combine the lime juice and cumin until well mixed. Place the mango, black beans, green onions, cilantro, and jalapeno in a large bowl. Pour the lime/cumin mixture over and mix gently. Taste - add more lime juice if needed.
  • Grill chicken breasts until thoroughly cooked. Let the meat rest for at least 5 minutes before slicing into thin slices. Place the corn tortillas in a panini grill for 30 seconds (or cook them in a dry skillet on each side for 45-60 seconds). Layer the warmed tortilla with sour cream, sliced chicken, cotija cheese, mango and black bean salsa. Serve with a side of guacamole and salsa. Enjoy.

1 ripe mango, peeled and diced

1 1/2 tsp rice vinegar, seasoned
1 dash(es) fine sea salt
SMOKY BLACK BEANS
2 can(s) bush's black beans
1 heaping tsp garlic paste
1 tsp cumin

1/2 tsp chipotle chili powder
1 dash(es) cayenne pepper
LEMONGRASS AND LIME RICE
1 c long grain rice, uncooked
2 c water
2 tsp lemongrass paste
zest of 1 lime

Steps:

  • 1. Make your mango salsa: Combine all ingredients in a small bowl and put in the fridge to chill.
  • 2. Make your black beans: Rinse one can of beans and reserve the liquid of the other. Add to a medium saucepan along with all the seasonings. Cover and cook on low for about 15 minutes, stirring occasionally. Remove from heat until ready to serve.

1 Jalapeno, deseeded & small dice
1/8 C Red Onion, finely chopped
1/2 T lime juice
1 T fresh mint, minced
2 Large Sweet Potatoes
4 T Olive Oil

Steps:

  • Preheat your grill at medium high heat. Begin by making the marinade for the mahi-mahi. Combine in a small bowl the jerk seasoning, pineapple juice, cayenne and cumin. Pour over the mahi and make sure the steaks are evenly coated. Set aside and start making your salsa. In a medium bowl, take the mango and cut the fruit into a small dice. Add your strained and rinsed black beans to the bowl, along with jalapeno pepper, red onion, lime juice, and mint. Gently toss with a spoon to combine and flavor with salt and pepper. Set aside but keep the salsa at room temperature. Take your sweet potatoes and cut them into 1/2' rounds. Toss with olive oil, salt and pepper until lightly coated. When ready, place the sweet potatoes directly on the grill rack. Grill on one side for about 8-10 minutes. When you flip them over, add your fish steaks to the grill also. Black Bean cakes
Two 15 0z cans black beans, rinsed
1/4 cup chopped fresh cilantro leaves

1 egg white, slightly beaten
1 tsp ground cumin
1 tsp minced garlic
1/2 tsp ground allspice
1/8 tsp cayenne pepper
1/3 cup dry bread crumbs
Nonstick cooking spray
1 tbsp olive oil
Fresh chopped cilantro and lime wedges for garnish (optional)

Steps:
