2 (1 1/4 pound) Cornish game hens

4 sprigs fresh basil, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a cookie sheet generously with cooking spray.
  • Combine apricot preserves, Sriracha, Worcestershire, and butter in a small pot and melt over medium heat. Stir constantly to prevent from sticking.
  • Clean hens and pat dry with paper towels. Coat outsides and insides with oil. Season with mango-habanero seasoning; insert sprigs of basil inside of the hens.

2 cups store bought mango sauce or 2 mangoes, peeled, seeded and diced
1 cup maple syrup, light or dark
1 4 ounce can pineapple chunks
1 (16-ounce) can pineapple rings, juice reserved
13 to 15 pound ham, bone-in
Toothpicks, as needed

Steps:

  • Preheat a barbecue, charcoal pit, or oven to 350 degrees F.
  • In a small saucepan, add the mango sauce or mangoes. Stir in the maple syrup, pineapple chunks and pineapple juice and bring to a simmer. Continue to simmer for 8 minutes and then remove from the heat. Working with a sharp knife, score the ham on the bias, fat side up, by drawing the knife from 1 side of the ham to the other. Be sure and make the incisions deep enough (about 1/2-inch) so that the glaze can reach the meat underneath the layer of fat. Continue scoring the top of the ham in the other direction to form a criss-cross pattern over the top. Using the toothpicks, attach the pineapple rings to the top and sides of the ham. With a pastry brush or a large spoon, liberally apply a layer of the glaze. Place the ham in the oven or a barbecue pit and cook, frequently applying coats of the glaze about every 20 minutes. Allow 20 to 25 minutes per pound of ham in a barbecue pit and 10 to 15 in a 350 degree F oven. Slice and serve.

GLAZE
2 jar(s) apricot or mango jam
2 Tbsp dijon mustard
2 Tbsp apricot brandy or cognac (or dry white wine)
1 tsp ground ginger
1 tsp all spice
2 Tbsp orange juice, fresh
optional: cut mango or apricot pieces and add to glaze
PORK
1-2 pork loins
olive oil, extra virgin
salt and pepper

Steps:

  • 1. For the glaze, combine all ingredients together in a medium sauce pan over medium-low heat. Bring to a simmer and cook for about 15 minutes. When done, pour about 1/3 of the sauce into a bowl for glazing use.
  • 2. Rub the pork loin with olive oil and season with salt and pepper. Set aside.
  • 3. Heat grill to medium-low. Cook pork loin for approximately 30 minutes, turning and glazing every 5 minutes.
  • 4. When done, remove and let sit for 10 minutes before serving. Serve with remaining glaze. Goes great with my Brown Rice Medley recipe.

1/2 recipe Pate Sucree for Mango Tart
1/2 recipe Lime Curd for Mango Tart
2 ripe mangoes, peeled
1/4 cup apricot jam

Steps:

  • Heat oven to 400 degrees. On a lightly floured surface, roll out piecrust to a 1/8-inch thickness. Transfer the crust to a 9-inch-round tart pan with removable bottom, and press it into the bottom edges and up the sides. Use a rolling pin to trim the dough flush with the edges of the pan. Lighly prick the bottom of the dough with a fork. Transfer crust to refrigerator to chill for 30 minutes.
  • Remove the crust from the refrigerator, and carefully line it with parchment paper, gently pressing the parchment into the edges of the crust; weigh down parchment with dried beans or pie weights.
  • Bake until the edges of the pastry begin to turn golden, about 15 minutes. Carefully remove the pie weights and the parchment paper. Continue to bake until crust is golden brown in color, 15 to 20 minutes more. Transfer the crust to a wire rack to cool completely.
  • When tart shell is completely cool, fill with lime curd using a small offset spatula to smooth top. Cut mango flesh away from pits, and slice to 1/8-inch thickness. Arrange fruit in a spiraling design on top of lime curd.
  • Place apricot jam and 1 tablespoon water in a small saucepan over medium heat until warm and thin. Pass mixture through a fine-mesh sieve. Using a pastry brush, coat mangoes with jam. Refrigerate until ready to serve.
