SALAD:

4-1/2 teaspoons sugar
7 cups torn romaine
7 cups chopped fresh spinach
1-1/2 cups sliced celery
1-1/2 cups sliced green onion
3 cans (11 ounces each) mandarin oranges, drained

Steps:

  • In a jar with a tight-fitting lid, combine the first five ingredients; shake well. Set aside. In a skillet, cook and stir the almonds and sugar over medium heat until sugar is melted and almonds are coated, 5-7 minutes. Spread on foil to cool completely., In a large salad bowl, combine the romaine, spinach, celery and onions. Add oranges and sugared almonds; toss gently. 1/3 cup salad oil
1/4 cup sugar
1/4 cup white vinegar
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
1 dash pepper
1/2 cup slivered almonds
3 tablespoons sugar
4 cups torn spinach (or any combination you'd like of romaine, iceburg, spinach etc.)
1 cup diced celery
1/2 cup sliced green onion (or sometimes I use red onion)
1 (11 ounce) can mandarin orange segments, drained

Steps:

  • In a jar, combine all ingredients for the dressing.
  • Shake well and refrigerate for at least one hour to blend flavours.
  • (I make it the night before) In a heavy skillet, cook almonds and sugar over medium heat until sugar melts and coats almonds, stirring frequently.

  • Break apart if necessary.
  • In large bowl, combine spinach, celery and green onions.
  • Just before serving, add almonds and orange segments.
  • Toss gently.

2 large granny smith apples, peeled, cored and cut into 3/8 inch cubes
1/4 cup lemon juice, freshly squeezed
1 bunch fresh spinach, trimmed, washed, remove stems and discard (about 10 ounces)
1 head romaine lettuce, washed, dried and torn into bite size pieces
1/3 cup pine nuts, lightly toasted
1/2 cup frozen orange juice concentrate
4 tablespoons six-year-old balsamic vinegar
6 tablespoons extra virgin olive oil
2 tablespoons liquid honey
2 teaspoons poppy seeds
1 tablespoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon black pepper, freshly ground

Steps:

  • SALAD - Drain oranges, place into a bowl and set aside.
  • Cube apples and place in a bowl.
  • Pour lemon juice over; mix well to coat to prevent from turning brown and let marinate for about 1 hour or longer.
  • Before using apples, drain any excess lemon juice.
  • Prepare spinach and Romaine lettuce; dry on paper towels, and add to a large bowl.
  • Add ice cubes and let chill for at least 1/2 hour to crisp.

3 small cans mandarin oranges, drained well
1 c slivered almonds
1/2 c sugar
1/2 tsp dry mustard
3 Tbsp white vinegar
3 Tbsp *onion juice
1/2 c vegetable oil
3 Tbsp seseme seeds
arrange spinach, oranges and almonds on 8 plates

  • 1. 1.Mix mustard, sugar, salt and vinegar 2.Add onion juice and stir 3.Add oil, slowly whisking constantly until blended 4.Add seseme seeds 5.Beat with mixer 2 minutes

1 (15 ounce) can mandarin oranges
1/4 cup dry white wine
2 tablespoons light soy sauce
3 tablespoons hoisin sauce
1 teaspoon ground ginger
1 large garlic clove, finely minced
1 lb shrimp, deveined and tails removed
1 (10 ounce) bag pre-washed spinach leaves
4 ounces sliced almonds
1 cup grape tomatoes
1 lb bacon
1 medium red bell pepper

Steps:

  • Drain and reserve the liquid from the oranges; set the oranges aside to chill in the fridge.
  • Combine the juice from the oranges, wine, soy sauce, hoisin sauce, ginger and garlic in a small dish; stir until well combined.
  • Place clean shrimp in a re-closeable storage bag; pour marinade over the shrimp and allow to marinade for at least an hour.
  • Partially freeze the bacon to allow for easier cutting.
  • Without separating the bacon pieces, cut the bacon lengthwise into 1/4 inch slices.
  • Turn the bacon and cut widthwise into 1/4 inch pieces.
  • Fry bacon bits until crispy; drain on paper towels and set aside.
  • Drain the bacon grease from the pan, allowing a thin coating to remain.
  • Toast the almonds on a high heat in the pan used to fry the bacon, stirring constantly to avoid burning them until they are a gold brown and toasted; set aside.
  • Clean the bell pepper and cut it in half; remove the seeds and membranes; set aside for grilling.
  • Drain the shrimp from the marinade and grill over high heat until seared and shrimp is cooked through.
  • Place the pepper halves on a cooler part of the grill to become crisp tender and warm; turning them often to avoid burning.
  • In the meantime, place the spinach on serving plates and top with the tomatoes, bacon bits, almonds and reserved mandarin oranges.
  • Remove the pepper to a cutting board and slice it into thin slices; place them on the salad.
  • Place hot shrimp on top of the salad.
  • Drizzle with your favorite bacon vinaigrette salad dressing.

1 bottle light raspberry vinagarette dressing

  • 1. Wash and drain spinach and take off large stems. Put in large bowl.

1/4 teaspoon salt
1/2 cup vegetable oil
1-1/2 teaspoons poppy seeds
1 package (10 ounces) fresh baby spinach
1 can (15 ounces) mandarin oranges, drained
2/3 cup slivered almonds, toasted

Steps:

  • In a blender, combine the orange juice concentrate, sugar, vinegar, onion and salt. While processing, gradually add oil in a steady stream. Stir in poppy seeds. Transfer to a small pitcher or bowl. Refrigerate for at least 1 hour or until chilled., On salad plates, arrange the spinach, mandarin oranges and almonds. Drizzle with dressing.

6 cups baby spinach leaves
3 cups canned mandarin oranges, drained
1/4 large red onion, thinly sliced
1 cup reduced-fat feta cheese, crumbled
1/4 cup fat-free Italian salad dressing

Spinach Salad:
Baby Spinach
Mandarin Oranges
Sliced Fresh Strawberries
Pecans
Thinly sliced red onion
Honey Mustard Dressing:
(this is an adaptation of an epicurious recipe)
2T Honey
2T Dijon or Spicy Mustard
4 scant Tablespoons Red Wine Vinegar
2t soy sauce
2t grated fresh ginger
2 cloves of garlic smashed with 1/2t salt
1c. vegetable oil

Steps:

  • You can assemble the salad about an hour ahead of dinner. You can make the dressing well in advance to let the flavors mingle. Wisk together all ingredients except oil, then add in oil slowly while whisking. It will emulsify nicely. The dressing will keep for several days, and you can marinate chicken in any leftovers.
