I hope you enjoy it too! **Time: allow 1-2 hours of time to marinate chicken and then afterwards another 1-2 hours to chill chicken after cooking. I like to cook the chicken the day before so the salad itself is easy to throw together.***

1 lb boneless skinless chicken breast, cubed
1/4 cup low-sodium teriyaki sauce
8 cups mixed salad greens, torn
2 (11 ounce) cans mandarin oranges, drained well
2 large carrots, shredded
1/2 cup almonds, slivered and toasted
3 tablespoons green onions, sliced very thin
2 tablespoons white wine vinegar or 2 tablespoons cider vinegar
2 tablespoons extra virgin olive oil
1 tablespoon low sodium soy sauce
2 teaspoons sugar
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon pepper (or to taste)

Steps:

  • In a zippered plastic bag (gallon size), combine the chicken and teriyaki sauce. Seal the bag, turn to coat and refrigerate for 1-2 hours to marinate.

1 can (15 ounces) mandarin oranges
1/4 cup olive oil
1/4 cup tarragon wine vinegar
1/4 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon dried basil
1/8 teaspoon ground savory
8 cups torn leaf lettuce
1 medium red onion, sliced
1/2 cup sliced almonds, toasted

Steps:

1/2 head iceburg lettuce
1/2 head Romaine lettuce, or leafy lettuce, or spinach
1/2 red onion, sweet, sliced into rings
1 (11-ounce) can mandarin orange segment, drained
Dressing:
3 tablespoons orange juice
3 tablespoons vegetable oil (try olive oil)
2 tablespoons cider vinegar
1 tablespoon splenda
1 to 2 teaspoon poppy seeds, optional
1/4 teaspoon salt
