MIXED GREEN AND MANDARIN ORANGE SALAD
Found this recipe in Shape Magazine and thought I'd give it a try. It is a flavorful and healthy salad and is one of my DH's favorites. Sometimes I add bean sprouts, wontons or crispy rice sticks.

Steps:
- Mix (or shake) the first five ingredients until well blended.
- Pour mixture over mandarin orange segments in a salad bowl (I like to use a glass or clear salad bowl for this recipe), cover with plastic wrap and refrigerate until well chilled.
- About 15-20 minutes.
- Add the lettuce, spinach, mushrooms, bean sprouts, onions to the mandarins in the salad bowl and toss well.
- Sprinkle with sesame seeds.
Tips:
- Select the ripest mandarins: Look for mandarins that are firm, plump, and have a deep orange color. Avoid any fruit that has blemishes or bruises.
- Use a sharp knife to cut the mandarins: This will help to prevent the fruit from tearing and make it easier to remove the segments.
- Remove the seeds from the mandarin segments: Use your fingers or a small knife to gently remove the seeds from the segments. This will help to improve the texture of the salad.
- Use a variety of greens in the salad: This will add color, texture, and flavor to the dish. Some good options include romaine lettuce, spinach, arugula, and watercress.
- Add other fruits and vegetables to the salad: This will make the salad more colorful and nutritious. Some good options include strawberries, blueberries, raspberries, avocado, cucumber, and bell pepper.
- Use a light dressing: A light vinaigrette or citrus dressing is a good option for this salad. Avoid using heavy dressings that will overpower the delicate flavors of the mandarin oranges.
Conclusion:
Mandarin orange mixed salad is a refreshing, healthy, and delicious salad that is perfect for any occasion. It is easy to make and can be customized to your liking. With its vibrant colors and flavors, this salad is sure to be a hit at your next party or gathering.
