Found this recipe in Shape Magazine and thought I'd give it a try. It is a flavorful and healthy salad and is one of my DH's favorites. Sometimes I add bean sprouts, wontons or crispy rice sticks.

MANDARIN ORANGE AND GREEN SALAD

The ladies at our old church always made this for dinners. When I asked for the recipe, they gave it to me on an old recipe card, written in beautiful cursive script. When reading it, I thought the mix of ingredients sounded odd, but it is absolutely delcious. It's a wonderful green salad that is wonderful for company. It's also good as a main course with a chicken breast on top. Very adaptable - you can add other fruit, too. Strawberries and blueberries.

Time 15m

Yield 4-6 serving(s)

Number Of Ingredients 14

1/2 cup sliced almonds
2 tablespoons sugar
1/2 head iceberg lettuce
1/2 head romaine lettuce
1 cup celery, chopped
2 whole green onions, chopped
1 (11 ounce) can mandarin oranges, drained
1/2 teaspoon salt
1 dash black pepper
1/4 cup canola oil
1 tablespoon chopped parsley
2 tablespoons sugar
2 tablespoons red wine vinegar
3 -4 dashes Tabasco sauce

Steps:

  • In small pan over medium-low heat, cook almonds and sugar, stirring constantly until almonds are coated and sugar is dissolved. Watch carefully as they burn easily.
  • Cool and stir in airtight container.
  • Mix dressing ingredients and chill.
  • Mix lettuces, celery and green onion in large salad bowl.
  • Just before serving, add almonds and oranges, and toss with dressing.

Tips:

  • Select the freshest ingredients: Use ripe, juicy oranges and crisp, tender greens for the best flavor and texture.
  • Use a variety of greens: Mix and match different types of greens, such as romaine lettuce, arugula, and spinach, to add color and flavor to the salad.
  • Don't overdo the dressing: A little bit of dressing goes a long way. Too much dressing can weigh down the salad and make it soggy.
  • Add some crunch: Nuts, seeds, and croutons add texture and crunch to the salad. Experiment with different combinations to find your favorites.
  • Make it a meal: Add some protein, such as grilled chicken or tofu, to the salad to make it a complete meal.

Conclusion:

Mandarin orange and green salad is a refreshing, flavorful, and healthy salad that is perfect for any occasion. With its sweet and tangy citrus flavor, crisp greens, and crunchy nuts, this salad is sure to please everyone. So next time you're looking for a light and healthy meal, give this salad a try.
