Time 22m

Number Of Ingredients 8

1 lb (450 g) green beans (, tough ends removed)
3 to 4 tablespoons peanut oil ((or vegetable))
6 cloves garlic (, minced)
1 thumb minced ginger
1 tablespoon Shaoxing wine ((or dry sherry, or chicken broth))
1 teaspoon soy sauce
1/2 teaspoon salt
Chinese chili flakes ((for garnish) (Optional))

Steps:

  • Thoroughly pat the green beans dry with paper towels to prevent oil splatter.
  • Heat 3 tablespoons of oil in a large skillet over medium-high heat until hot. Turn to medium heat and add the green beans. Toss to coat well with the oil. Spread out the green beans as much as possible with minimal overlap and sprinkle with the salt. Let cook without touching for 2 to 3 minutes, until the bottom starts to blister and turn golden. Remove any green beans that have blistered and charred on one side and transfer them to a big plate. Keep cooking the rest of the green beans, flipping occasionally and taking out the ones that are blistered. The whole process should take about 6 to 8 minutes.
  • If your pan looks dry, add the remaining 1 tablespoon of oil. Otherwise, directly add the garlic and ginger to the pan. Stir and cook for a few minutes to release fragrance. Add back all the cooked green beans and stir to mix a few times.
  • Pour in the Shaoxing wine and soy sauce and sprinkle with salt. Stir immediately to mix everything well. Taste the green beans. Adjust seasoning by adding more salt or soy sauce, if needed.
  • Transfer everything to a big plate. Sprinkle with chili flakes, if using. Serve hot as a side dish.

I modified this recipe to be less oily. It is almost as good as take-out Chinese green beans. It tastes wonderful with ham and a baked yam.

Time 25m

Yield 4 serving(s)

Number Of Ingredients 10

1 lb cut green beans
2 tablespoons blanched almond halves
1 tablespoon oil
1/2 cup coarsely sliced celery
1 teaspoon soy sauce
1 chicken bouillon cube
1 teaspoon sugar
1 teaspoon lemon juice
2 teaspoons cornstarch, mixed with
1 tablespoon water

Steps:

  • Boil 4 cups water in a pot and add green beans.
  • Boil for 2 minutes.
  • Drain liquid and save.
  • Lightly brown almonds in oil.
  • Add celery and sauté for 2 minutes.
  • Add 1/2 cup of liquid from the boiled beans, chicken bouillon, soy sauce, sugar and lemon juice.
  • Cover and simmer for 3 minutes.
  • Stir in green beans until hot through.
  • Add cornstarch mixture and cook until sauce thickens.

Tips:

  • Choose fresh, tender green beans: Look for beans that are bright green in color and have no blemishes or bruises.
  • Trim the green beans: Snap off the ends of the green beans and remove any strings.
  • Blanch the green beans: This will help them retain their bright green color and crisp texture. To blanch, bring a large pot of salted water to a boil. Add the green beans and cook for 2-3 minutes, or until they are tender-crisp. Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process.
  • Make the mandarin orange sauce: Combine mandarin orange segments, soy sauce, rice vinegar, sesame oil, ginger, garlic, and honey in a bowl. Whisk until well blended.
  • Cook the green beans: Heat a large skillet or wok over medium-high heat. Add the green beans and cook, stirring frequently, until they are heated through. Add the mandarin orange sauce and cook for an additional 1-2 minutes, or until the sauce is hot and bubbly.
  • Serve immediately: Mandarin green beans are best served hot or warm. They can be garnished with sesame seeds, green onions, or chopped peanuts.
