FRESH AND LIGHT CUCUMBER SALSA

Fresh and Light Cucumber Salsa image

This is such a fresh and light salsa. I made this one day when I needed some extra ingredients and decided to throw some cucumbers in. I now make this for every picnic or party I go to. It is requested. Wherever I am, I have to give the recipe to someone. I keep this in my fridge at all times and all my kids love it. A great way to get them to eat their veggies.

Tips:

  • Choose ripe and flavorful mandarins. Look for fruits that are firm to the touch and have a deep orange color.
  • Use a sharp knife to cut the mandarins. This will help to prevent the fruit from becoming bruised or squished.
  • Remove the seeds from the mandarins before using them in the salsa. Seeds can add a bitter flavor to the dish.
  • If you don't have fresh cilantro, you can use dried cilantro instead. Just be sure to use half the amount, as dried cilantro is more concentrated.
  • Serve the salsa immediately or chill it for later use. The salsa will keep in the refrigerator for up to 3 days.

Conclusion:

Mandarin cucumber salsa is a refreshing and flavorful dish that is perfect for any occasion. It is easy to make and can be tailored to your own personal taste.
