1/2 cup vegetable oil
1/2 cup chopped walnuts, if desired
1 can (11 oz) mandarin orange segments, drained (reserve 1/3 cup liquid)
4 eggs
1 can (20 oz) crushed pineapple, undrained
1 box (4-serving size) vanilla instant pudding and pie filling mix
1/2 to 1 teaspoon grated orange peel, if desired
1 cup Cool Whip frozen whipped topping, thawed

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease or lightly spray bottom only of 13x9-inch pan.
  • In large bowl, beat cake mix, oil, walnuts, orange segments, reserved 1/3 cup orange liquid, and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes. Pour into pan.
  • Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • To make pineapple frosting, stir together pineapple, dry pudding mix and orange peel. Gently stir in whipped topping. Spread on cake. Store tightly covered in refrigerator.

2 large eggs
1/3 cup oil or 1/3 cup applesauce
11 ounces mandarin oranges (including juice)
12 ounces Cool Whip
8 ounces crushed pineapple (including juice)
3 ounces instant vanilla pudding
mandarin orange segments
mint leaf

Steps:

  • Mix the cake mix, eggs, oil or applesauce, and mandarin oranges together.
  • Grease and flour two 9 inch cake pans.

I decided it would be a Hawaiian dump cake with all the flavors I love...pineapple, orange, and coconut. yumm I make a blackberry version too....

1 - 21 oz can crushed pineapple, juice included
2-3 11 oz cans mandarin oranges, about 1/2 of the juice included
2/3 c sugar, or more if u prefer it sweeter, or replace it with stevia or agave nectar
2 Tbsp cornstarch
1 dash(es) salt
1 - 18 1/2 oz box of duncan hines pineapple cake mix, dry - or yellow if making another fruit version or pineapple isn't available.
3/4 c butter, melted (to make lower fat, mix 1/2 c butter with 1/2 c pineapple or orange juice)
1 1/2 c coconut, flaked
1 c sliced almonds, raw cashews, or macadamia nuts, optional

Steps:

  • 1. Heat oven to 350 degrees. Spray a 9"x13" baking dish with cooking spray. Combine the crushed pineapple, mandarin oranges, cornstarch, salt, and sugar in the pan. Mix well and sprinkle the dry cake mix evenly over fruit. Melt butter in microwave and pour evenly over cake mix. Sprinkle with coconut and nuts if desired.
  • 2. Bake for 45-50 minutes or until light golden brown. You want it to get bubbly around the edges, so cover it with foil before it gets too brown. Let stand for 10-15 minutes and serve warm or cool with whipped cream or vanilla ice cream. Enjoy!
  • 3. Variation: Blackberry - I mix 3 bags (12 oz each) of frozen blackberries with 3/4 to 1 cup sugar (to your taste) with a dash of salt and 2 Tbl cornstarch mixed with 1/2 cup cold water..then proceed as above with the cake mix, butter, coconut and nuts. Bake as above. Enjoy a delicious cobbler type dessert without all the work.
  • 4. ** If you wish to make this a low sugar dessert, use sugar free yellow cake mix and replace all sugar with Stevia in the Raw and a little Agave nectar. I personally like to use a combo of SF sweeteners for better flavor, so add a little coconut sugar or brown sugar. The addition of 1/4 cup makes the flavor better and when the cake is divided into 12-15 servings, it doesn't seem to spike my blood sugars.

1/2 c vegetable or canola oil
1 can(s) ( 15 oz) can mandarin oranges, un drained & separated
3 eggs
1 can(s) ( 8 oz) crushed pineapple, un drained
1 box (4 0z) vanilla instant pudding
1 pkg ( 13 oz) container cool whip, thawed

Steps:

  • 1. Add the cake mix, oil, eggs and mandarin oranges with liquid to a large mixing bowl. Remove 6-8 orange segments and set aside for garnish
  • 2. Using a electric mixer blend together the cake ingredients. Pour into two greased and floured round cake pans.
  • 3. Bake at 350 degrees for 25 - 30 minutes or until golden brown and the cake springs back. Remove from oven and let cool in pans 10 minutes. Remove from pans and cool completely on a baking rack. Frost when cakes are completely cooled.

4 to 5 medium Satsuma mandarins (1 1/2 pounds), thinly sliced and seeded
8 ounces (2 sticks) unsalted butter, softened
1 vanilla bean, split and scraped, pod reserved for another use
1 1/2 cups sugar
3 tablespoons freshly squeezed Satsuma mandarin juice (from 1 mandarin)
1 1/3 cups plus 1 tablespoon all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon coarse salt
1 tablespoon finely grated mandarin zest
2 large eggs, room temperature
1/2 cup whole milk

Steps:

  • Preheat oven to 350 degrees. Cook mandarins in a large pot of boiling water for 3 minutes. Drain. Arrange slices in a single layer on paper towels.
  • Place 1 stick of butter in a 9-by-2-inch round cake pan. Mix half the vanilla seeds and 1/2 cup sugar, then sprinkle over butter. Place in oven until butter melts, about 7 minutes. Carefully whisk in 2 tablespoons mandarin juice.
  • Whisk flour, baking powder, and salt in a medium bowl. Cream zest and remaining 1 stick butter, 1 cup sugar, and vanilla seeds with a mixer until light and fluffy. With mixer running, add eggs, 1 at a time, beating well after each addition. Reduce speed to low. Add half the flour mixture, then the milk and remaining 1 tablespoon juice. Beat in remaining flour mixture.
  • Arrange mandarin slices in a circle over sugar in pan, starting in the center and spiraling outward, overlapping slices slightly. (Use slices that are completely intact.) Gently spoon batter on top of mandarins, and spread evenly. Bake cake until golden brown and a tester inserted in center comes out clean, 45 to 50 minutes. Let cool in pan on wire rack. Run a knife around edge of pan to loosen cake. Invert onto a serving plate, and let cool before serving.

15 oz can of mandarin oranges
1 1/2 c all purpose flour
1 c sugar
1 tsp baking soda
1/4 tsp salt
1 egg, large
1/2 c brown sugar, firmly packed
1/2 c pecans or walnut pieces

Steps:

  • 1. Preheat oven to 350 degrees. Grease & flour 8" x 8" square pan.
  • 2. Separate the juice from the mandarin oranges, reserving the liquid.
  • 3. In a bowl combine the flour, sugar, baking soda, and salt. Whisk egg and reserved juice from oranges. Stir into the dry ingredients. Then fold in the oranges. Should resemble a barely pourable batter.
  • 4. Pour batter into the prepared pan.
  • 5. Combine the 1/2 c. of brown sugar and the 1/2 of nuts. Sprinkle over the top of the batter and bake in the center of the oven for 40-45 mins. Cool on rack. Serve with dollop of whipped cream if desired.

1 box duncan hines butter recipe cake mix (no pudding)
1, 11 oz. can(s) mandarin orange (juice and all)
3 eggs
3/4 c oil
1, 3oz. box small box vanilla pudding
1 large box cool whip
1 medium can crushed pineapple

  • 1. Preheat oven 350 and grease two cake pans. Add all ingredients for cake and blend. Pour into pans and bake. Bake at 350 degrees according to the box directions for the cake. For icing, combine the cool whip, pineapple and pudding powder. Note: I put as much juice from pineapple to give it a good consistency. Not runney. Stir gently. After your cakes cool, ice between each later and then the whole cake. There's a lot of icing, so be generous. Cool cake in fridge before serving. 1 (18.25 ounce) package yellow cake mix
4 eggs
1 (11 ounce) can mandarin oranges
⅓ cup vegetable oil
⅓ cup water
⅓ cup white sugar
¼ cup orange liqueur, such as Grand Marnier®
2 (15 ounce) cans mandarin oranges, drained
1 recipe Frosting or whipped cream (see Editor's Notes)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line two 8-inch pans with parchment paper.
  • In a large bowl, combine yellow cake mix, eggs, mandarin oranges with juice, and oil. Beat well.
  • Divide batter into prepared cake pans. Bake in preheated oven for 30 minutes or until cake springs back when lightly tapped. Allow to cool.
  • While the cakes are cooling, make the simple syrup. Combine 1/3 cup water and 1/2 cup sugar in a glass measuring cup. Microwave for 1 minute. Stir to dissolve sugar. Pour about 1/4 cup orange liqueur into sugar-water mixture.
  • Set one cake layer on a serving plate. Brush generously with orange syrup. Spread cake with frosting and layer drained mandarin oranges on top of filling. Carefully set remaining cake layer on base. Brush top layer with orange syrup. Frost top and sides of cake; decorate top with remaining orange slices, if desired.

1/2 cup vegetable oil
1/2 cup chopped walnuts, if desired
1 (11 ounce) can mandarin orange segments, undrained
4 eggs
1 (20 ounce) can crushed pineapple, undrained
1 (6 ounce) box vanilla flavor instant pudding and pie filling mix, mix
1/2-1 teaspoon grated orange peel, if desired
1 cup frozen whipped topping (thawed)

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of 13x9-inch pan, or lightly spray.
  • In large bowl, beat cake mix, oil, walnuts, orange segments, and eggs with electric mixer on low speed 30 seconds; beat on medium speed 2 minutes. Pour into pan.
  • Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • To make pineapple frosting, stir together pineapple, dry pudding mix and orange peel. Gently stir in whipped topping. Spread on cake. Store tightly covered in refrigerator.

9 oz carton frozen whipped topping, thawed
8 oz can crushed pineapple, with juice

  • 1. Preheat oven to 350'f degrees. Grease and flour three 9-inch cake pans.
  • 2. In mixing bowl. combine cake mix, mandarin oranges, mandarin orange juice, egg and oil. Beat for 2 minutes with electric mixer. Pour into pans and bake for 20 to 25 minutes or until cake test comes out clean. Cool in pan for 5 minutes, turn out of pans and finish cooling on wire racks. Icing: In a mixing bowl, combine whipped topping , pineapple, juice from can and vanilla pudding mix, frost between layers and top of cake.
