Living out on a farm in Dalhart, Tx, as a child, I will always remember the taste of mamma's squah because it had a sweetness to it as well as the crunch!! Hope you will enjoy this recipe...simple, yet great!

- 1. Wash squash and slice into rounds. Place into bowl! Sprinkle salt,pepper and garlic powder on the squash!
- 2. Take a large zip-lock bag or a grocery bag{paper sack}, and add flour to it! Enough to coat the squash while you shake it! Add squash and shake to coat all the squash! Remove squash and shake offloose flour!
- 3. In a skillet add vegetable oil and heat to meadium high heat. when the oil is hot, add the squash and let fry up! In the last few minutes of cooking, sprinkle the sugar on the squash! It adds so much to this crispy fried veggie!

- 1. Slice squash, then place in large ziplock bag. Pour flour, salt, pepper, garlic powder in bag, and shake it up to coat the squash.
- 2. In frying pan, heat oil. Then put squash in pan and fry. Don't forget to shake off excess flour.
- 3. Fry til browned, then in the last few minutes sprinkle sugar on squash, then cook a little while longer and drain on paper towel!

- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add squash and onion, cover, and steam until squash is tender and easily mashed with a fork, 10 to 15 minutes.
- Whisk egg and sour cream together in the prepared casserole dish; add squash, onions, 2/3 the crackers, and 2/3 the Cheddar cheese. Stir with a fork. Cover the squash mixture with remaining Cheddar cheese and crackers.
- Bake in the preheated oven until cheese is melted and crackers are lightly browned, about 30 minutes.
