MUMBO SAUCE - D.C.'S FAMOUS SWEET & SOUR SAUCE
Apparently, this sweet-and-sour condiment came to Washington D.C. via Chicago, where it somehow became a staple in Chinese take-out restaurants served as a condiment with fried chicken wings, among other things. This is my version.

Steps:
- Place tomato paste, ketchup, sugar in a saucepan. Pour in pineapple juice, white vinegar, lemon juice, and honey into the pan. Add soy sauce, grated ginger, and cayenne pepper. Whisk together thoroughly. Place pan over medium-high heat. As soon as mixture starts to bubble, reduce heat to medium-low and simmer, whisking occasionally, until mixture has thickened slightly, about 10 minutes.
- Remove pan from heat; allow to cool about 10 minutes or so. Pour sauce through a fine strainer to eliminate solids.

- In a gallon size freezer type bag, combine chicken, garlic, ginger, soy sauce, lime juice & sesame oil. Marinate in refrigerator for 4 hours to overnight. While chicken is marinating, create Mango Salsa and refrigerate until ready to use. Grill or broil for 5 minutes each side or until cooked through. If baking, bake at 350*F for 30 minutes, flipping halfway through, or until done. When finished cooking, plate and top with a generous amount of Mango Salsa. Devour!

KEN'S MUMBO® SAUCE
This is a great, sweet sauce for fried chicken and/or fries. The sauce is reminiscent of the mumbo sauce found in Chinese carry outs in the DC area. Enjoy! MUMBO® is a registered trademark of SELECT BRANDS LLC. www.selectbrandsllc.com/companyhistory.php

Steps:
- In a mixing bowl combine all ingredients. Mix well.
- Pour into pot.
- Bring to boil using low heat. Stirring constantly.
- Let cool or serve hot.
- To enhance the flavor of the sauce, just add more of the above ingredients. DO NOT USE SALT, because it will destroy the sweetness of the sauce.
Tips:
- To make the best mambo chicken, use boneless, skinless chicken breasts or thighs. Cut them into 1-inch pieces for even cooking.
- For a more flavorful dish, marinate the chicken in the sauce for at least 30 minutes before cooking.
- If you don't have time to marinate the chicken, you can still make a delicious mambo chicken dish by simply cooking the chicken in the sauce.
- Serve mambo chicken with your favorite sides, such as rice, noodles, or vegetables.
- If you like spicy food, add a pinch of cayenne pepper or red pepper flakes to the sauce.
- For a sweeter sauce, add a tablespoon of honey or brown sugar.
- Garnish the finished dish with chopped green onions or cilantro for a pop of color and flavor.
Conclusion:
Mambo chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. With its sweet and tangy sauce, tender chicken, and colorful vegetables, it's a dish that the whole family will enjoy. So next time you're looking for a quick and flavorful meal, give mambo chicken a try. You won't be disappointed!
