MA MAW'S MEXICAN CASSEROLE AKA DORITO BEEF CASSEROLE
Layers of ground beef, corn tortilla chips, chili beans, Rotel tomatoes and cheese make up this ooey-gooey casserole.

- Preheat oven to 350 degrees. In a large skillet brown the ground beef with onion and garlic. Drain any grease.
- Add the ranch style beans and chili powder; mix to combine and set aside. In a separate bowl combine the soup and the Rotel tomatoes together and set aside.
- Add a layer of slightly crushed corn tortilla chips in the bottom of a greased 2 quart, 9 x 9 inch or 8 x 8 x 2 inch casserole dish.
- Add half of the ground beef mixture and half of the soup mixture. Top with 1 cup of shredded cheese.
- Repeat layers a second time ending with the remaining shredded cheese. Place in a 350 degree oven and bake for 30 - 35 minutes or just until hot and bubbly around the edges.
- This casserole is great served with Cilantro Lime Rice and Flour Tortillas on the side.

MAMAW'S CHICKEN AND RICE CASSEROLE
I grew up on this recipe, my Grandmother got it from a lady from church at a pot luck a long time ago! She passed it down to my mom and it's always been a family favorite. Quick and easy for school nights, and the leftovers are just as good! You can use less butter on top of course, my Momma and Mamaw always put the full stick on top (gotta love Southern ladies and their butter!)
