1/2 pound ground beef
1/2 pound bulk Italian sausage
1 large onion, chopped
3 garlic cloves, minced
1 can (28 ounces) crushed tomatoes, undrained
1 can (6 ounces) tomato paste
1-1/2 cups water
1 cup salsa
2 teaspoons sugar
1 to 2 teaspoons chili powder
1 teaspoon fennel seed
1 teaspoon dried oregano
1 teaspoon dried basil
9 lasagna noodles
2 cups 4% cottage cheese
4 cups shredded part-skim mozzarella cheese
3/4 cup grated Parmesan cheese

Steps:

  • In a large kettle or Dutch oven, cook beef, sausage and onion until meat is no longer pink and onion is tender; drain. Stir in the next 10 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 3 hours, stirring occasionally. , Meanwhile, cook lasagna noodles according to package directions; drain and rinse in cold water. In a greased 13x9-in. baking dish, layer a third of the noodles and meat sauce, half of the cottage cheese, a third of the mozzarella and a third of the Parmesan. Repeat layers. 2 garlic cloves, minced
1-1/2 cups water
1 can (15 ounces) tomato sauce
1 can (6 ounces) tomato paste
1/2 to 1 envelope onion soup mix
1 teaspoon dried oregano
1/2 teaspoon sugar
1/4 teaspoon pepper
9 lasagna noodles, cooked and drained
2 cups 4% cottage cheese
4 cups shredded part-skim mozzarella cheese

Steps:

I seriously love the balance of herbs in this recipe! The sauce was so good that I plan to use it the next time I whip up a batch of spaghetti. We used the whole grain noodles as Cherie suggests and were very happy with the way it turned out. Highly recommended!

1 lb ground chuck
1 medium onion, chopped
1 clove garlic, crushed
2 tsp salt
1 1/2 tsp oregano
1 tsp basil
1/4 tsp pepper
1 Tbsp sugar
2 can(s) tomato paste, 6oz
1 can(s) diced tomatoes, 28oz
3/4 c water
1 large block of mozzarella cheese, shredded
1 large carton of large curd cottage cheese
grated parmesan cheese
8 lasagna noodles, boiled...i like whole grain noodles

Steps:

  • 1. Brown meat and onion together. Drain off grease and put meat in a large sauce pan.
  • 2. Add the remaining ingredients through the water. Then, simmer for approximately 45 minutes.
  • 3. Meanwhile, boil the lasagna noodles. Spray a deep 9x13 inch baking dish with Pam.
  • 4. To assemble the lasagna you will alternate layers of meat, cheese, noodles...3 layers of meat and cheese; 2 layers of noodles. The last layer of cheese will only be the Parmesan cheese. Split the Mozzarella and cottage cheeses between the middle 2 layers of cheese. Use as much of the Parmesan cheese as you prefer.
  • 5. You can make this ahead of time and not bake it until you are ready. When you are ready, preheat the oven to 350 degrees. Bake until hot and bubbly; approximately 1 hour covered, then 1/2 hour uncovered.
  • 6. It will need to sit for approximately 15 minutes when it comes out of the oven in order to set and make cutting easier.

¾ pound lean ground beef
½ cup minced onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
2 (6.5 ounce) cans canned tomato sauce
½ cup water
2 tablespoons white sugar
1 ½ teaspoons dried basil leaves
½ teaspoon fennel seeds
1 teaspoon Italian seasoning
1 ½ teaspoons salt, divided, or to taste
¼ teaspoon ground black pepper
4 tablespoons chopped fresh parsley
12 lasagna noodles
16 ounces ricotta cheese
1 egg
¾ pound mozzarella cheese, sliced
¾ cup grated Parmesan cheese

Steps:

  • In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 teaspoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
  • Preheat oven to 375 degrees F (190 degrees C).
  • To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13-inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  • Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

6 -7 cups spaghetti sauce (recipe #22782) or 6 -7 cups use jo mama's world famous spaghetti sauce (Jo Mama's World Famous Spaghetti)
1 (16 ounce) box extra wide lasagna noodles
1 (32 ounce) carton cottage cheese
1 teaspoon oregano
3/4 teaspoon salt
1/2 cup freshly grated parmesan cheese (divided)
1 1/2 lbs mozzarella cheese, shredded

Steps:

  • Cook lasagna noodles according to package directions, drain and cut to fit pan.
  • In small bowl, mix cottage cheese, oregano, salt and 1/4 cup of parmesan cheese.
  • Using two deep 9 x 7-inch glass baking pans or one deep 9 x 13-inch casserole dish, make a layer of noodles followed with 1/2 cottage cheese mixture, 1/2 mozzarella cheese and 1/3 sauce.
  • Follow with another noodle layer, remaining cottage cheese, mozzarella cheese and 1/3 sauce.

1/2 cup olive oil
1 onion, diced
4 garlic cloves, minced
Pinch kosher salt and freshly ground black pepper
1 pound pork neck bones
1 pound ground veal
1 pound ground beef
1 pound spicy Italian sausage, loose or removed from casings
1/2 cup dry white wine
1 (28-ounce) can San Marzano tomatoes, with their juice
2 bay leaves
1 pound dried lasagna noodles
2 pounds whole milk ricotta cheese
1/4 cup chopped fresh flat-leaf parsley
1/4 cup chopped fresh basil leaves
1/4 cup chopped fresh oregano leaves
2 large eggs
1/2 cup grated Parmesan, plus more for final topping
1 pound fresh mozzarella cheese, grated

Steps:

  • In a large Dutch oven or heavy pot, heat the olive oil over medium heat. Add the onion, garlic, and a three-finger pinch of salt and sweat them until they're translucent, about 2 minutes. Add the neck bones and let them brown, about 5 minutes. Add the ground veal, beef and sausage, and season with another healthy pinch of salt. Cook until the meat is browned, about 10 minutes. Stir in the white wine, tomatoes and their juice, and the bay leaves. Scrape the bottom of the pot with a wooden spoon, making sure to get all of the browned bits into the sauce. Season the sauce with salt, to taste, and simmer for 2 hours over medium heat. Remove the bay leaves and neck bones and let cool. Skim any fat that rises to the surface.
  • Bring a large pot of water to a boil over medium heat. Add enough salt so that it tastes seasoned and allow the water to return to a boil. Add the noodles and cook until al dente. Drain well and set aside.
  • In a medium bowl mix together the ricotta, parsley, basil, oregano, eggs, and Parmesan with a pinch of salt.
  • Preheat the oven to 350 degrees F.
  • Ladle about 1 cup of sauce on the bottom of a lasagna pan. Arrange a layer of noodles followed by a layer of sauce and then some of the ricotta mixture. Top with a layer of mozzarella, smoothing it with a spatula to the edges. Repeat the process until the pan is full. Finish with a final layer of noodles, sauce, the mozzarella, and Parmesan.
  • Cover the lasagna with aluminum foil and bake for 1 hour. Uncover and bake for 30 minutes. Remove the pan from the oven and let it rest, 5 to 10 minutes before serving.

6 qt water
1 Tbsp salt
1 lb lasagne (lasagne sauce & lasagne filling to follow)
3/4 c coarsely grated romano cheese
1/2 lb mozzarella cheese coarsely grated
LASAGNE SAUCE
1/2 c oil
2 medium onions finely choppted
2 clove garlic minced
1/2 tsp pepper
salt to taste
1/4 tsp oregano
2 can(s) (6 oz.) can tomato paste
2 can(s) can of water
2 can(s) (29 oz.) cans italian crushed tomatoes
LASAGNE FILLING
1 lb lean ground beef
1 lb ricotta cheese
3/4 c grated romano cheese
3 eggs
2 clove garlic, minced
1/4 tsp oregano
1/2 tsp pepper
pinch salt

Steps:

  • 1. Bring water and salt to rolling boil in a large pot. Add lasagne noodles and cook until just tender--do not overcook. Remove from heat and run cold water into pot until noodles are cold, then drain.
  • 2. Use an oblong baking dish at least 2 1/2 to 3 inches deep (a cake pan will do). Grease baking dish; cover the bottom with some of the Lasagne Sauce and 2 tablespoons water. Add a layer of drained noodles, a layer of Lasahne Filling and then a thin layer of sauce. Sprinkle with part of the grated Romano and mozzarella cheeses. Repeat layers, finishing off with noodles on the top and sprinkle with remaining grated Romano and mozzarella cheeses. Cover with aluminum foil and bake in a *375 oven for 60 to 70 minutes.
  • 3. FOR LASAGNE SAUCE Heat oil. Add onions and garlic; cook until brown. Add salt, pepper, oregano, tomato paste, water and tomatoes. Simmer, uncovered, for 1 1/2 hours, stirring occasionally.
  • 4. FOR LASAGNE FILLING Put all ingredients in a mixing bowl and mix well. You can serve with a salad and garlic bread if you wish.
