Time 2h

Yield 4 to 6 servings

Number Of Ingredients 17

2 medium onions, thinly sliced
1/4 cup all-purpose flour
2 tablespoons panko bread crumbs
1 teaspoon kosher salt
Nonstick spray
1 pound fresh green beans, rinsed and trimmed
1 gallon water
2 tablespoons kosher salt
2 tablespoons unsalted butter
12 ounces mushrooms, trimmed and cut into 1/2-inch pieces
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 cloves garlic, minced
1/4 teaspoon freshly ground nutmeg
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup half-and-half

Steps:

  • Preheat the oven to 475 degrees F.
  • Combine the onions, flour, panko and salt in a large mixing bowl and toss to combine. Coat a sheet pan with nonstick spray and evenly spread the onions on the pan. Bake in the oven until golden brown, tossing every 10 minutes, for approximately 30 minutes. Once done, remove from the oven and set aside until ready to use.
  • Turn the oven down to 400 degrees F.
  • While the onions are cooking, prepare the beans. Bring a gallon of water and 2 tablespoons of salt to a boil in an 8-quart saucepan. Blanch for 5 minutes. Drain in a colander and immediately plunge the beans into a large bowl of ice water to stop the cooking. Drain and set aside.
  • Melt the butter in a 12-inch cast-iron skillet set over medium-high heat. Add the mushrooms, salt and pepper and cook, stirring occasionally, until the mushrooms begin to give up some of their liquid, approximately 4 to 5 minutes. Add the garlic and nutmeg and continue to cook for another 1 to 2 minutes. Sprinkle the flour over the mixture and stir to combine. Cook for 1 minute. Add the broth and simmer for 1 minute. Add the half-and-half and cook until the mixture thickens, approximately 6 to 8 minutes.
  • Remove from the heat and stir in 1/4 of the onions and all of the green beans. Top with the remaining onions. Place into the oven and bake until bubbly, approximately 15 minutes. Remove and serve immediately.

Time 50m

Number Of Ingredients 5

6 slices of bacon
2 pounds of rinsed and trimmed fresh green beans
1/2 cup diced yellow onion
1 1/2 cups chicken broth or water
salt and pepper to taste (I usually don't add salt because the bacon is plenty salty)

Steps:

  • Cut the bacon into small pieces and cook over medium heat in a heavy 3 qt saucepan until the bacon is fully rendered.
  • DO NOT remove any of the bacon grease - it's what makes these green beans so amazing!
  • Add the onions and saute with bacon until transparent.
  • Add green beans and pepper and stir making sure the bacon drippings are getting mixed in well.
  • Add chicken broth and reduce heat to low.
  • Cover and continue cooking the green beans for 30 minutes up to two hours, stirring occasionally. Make sure there is liquid in the bottom of your pot so that the beans don't get scorched.
  • Check for seasoning levels and add salt and pepper if necessary.
  • Enjoy!

Tips:

  • Choose fresh, tender green beans: Look for beans that are bright green in color and snap easily when you bend them. Avoid beans that are limp or have brown spots.
  • Trim the beans properly: Cut off the stem end of each bean, then snap or cut off the tough string that runs along the side of the bean. This will help the beans cook evenly.
  • Cook the beans until they are tender-crisp: Green beans should be cooked until they are tender but still have a slight crunch. Overcooked beans will be mushy and bland.
  • Season the beans simply: Green beans have a delicate flavor, so they don't need a lot of seasoning. A simple combination of salt, pepper, and garlic is often all you need.
  • Serve the beans immediately: Green beans are best served hot or warm. They can be served as a side dish or main course.

Conclusion:

Green beans are a versatile vegetable that can be cooked in a variety of ways. They are a good source of vitamins, minerals, and fiber. With their simple preparation and delicious flavor, green beans are a great addition to any meal.
