This recipe was my Grandmother's and it actually won a Blue Ribbon in the Tennessee State Fair! Be sure to use fresh squash, I use butternut but other squash would also be good.

6 pounds butternut squash - peeled, seeded and sliced
1 egg, beaten
½ cup milk
½ cup all-purpose flour
½ cup cornmeal
1 pinch salt
1 pinch ground black pepper
1 pinch garlic salt
1 cup oil for frying

Steps:

  • Combine egg and milk together in a small bowl, mix well.
  • In a second bowl, combine flour, cornmeal, salt, pepper and garlic salt. Dip squash slices first in the egg mixture, then dredge the squash in the dry mixture.
  • Heat 1/2 inch of oil in a deep skillet over medium heat. Fry squash until golden brown.

Number Of Ingredients 4

1 1/2 gallons water, divided
1 teaspoon kosher salt
1 1/2 pounds ice
3 pounds summer squash, trimmed and cut into 1/2-inch slices

Steps:

  • Put 1 gallon of water and salt into an 8-quart pot. Bring to a boil over high heat. Put the remaining 1/2 gallon of water and the ice into a container. Set aside. Add the squash to the boiling water and cook it for 3 minutes. Immediately drain in a colander and then transfer to the ice bath. Shock for 3 minutes, replenishing the ice if necessary. Drain the squash and transfer it to 2 half sheet pans lined with 3 layers of paper towels. Pat dry with additional paper towels. Remove the paper towels and place the pans in the bottom of the freezer until frozen, about 1 1/2 hours.
  • Once frozen, transfer the squash to a 1 gallon resealable plastic bag. Lay the bag flat on a counter and using a straw, suck out any remaining air in the bag. Label and return the bag to the freezer. Serve the squash frozen.

Adopted Recipe...I worked through all my adopted recipes and made changes to suit my tastes and cooking habits. I do not cook with bacon grease, so I changed the recipe from bacon grease to butter. (Note added 2/5/06).

2 -3 lbs yellow squash
2 tablespoons butter
2 tablespoons onions, diced
1 teaspoon salt
1/2 cup water
1 tablespoon sugar
1/4 cup cream

Steps:

  • Wash tender yellow squash; remove stem and blossom ends.
  • Cut into 1/2-inch rounds.
  • Place squash, butter, onions and salt into heavy skillet.
  • Add water.
  • Cover and cook on medium low heat until water is absorbed and squash is tender.
  • Lightly mash with a fork.
  • Add sugar and cream.
  • Let it cook slowly until mixture is fairly dry and flavors develop, being careful not to let it scorch.

1 cup buttermilk
1/2 cup yellow cornmeal
1/2 cup all-purpose flour
salt
vegetable oil, to a 1-inch depth heated until just before smoking
1 yellow squash, cut in 1/8 " - 1/4-inch slices

Steps:

  • Soak squash in buttermilk to cover, at least 5 minutes.
  • Mix dry ingredients together.
  • Dredge marinated squash in cornmeal mixture (I use a Ziploc baggie & shake until covered).
  • Fry in vegetable oil until golden, turn and fry until lightly golden on other side.
  • Salt lightly, remove from oil, & drain on paper towels.
  • This is delicious - also works for fried green tomatoes (cut green tomatoes at least 1/4" slices).
  • If you like fried okra - batter should be 1 cup milk + 1 egg.
  • Dredge in same mixture as above & salt as you do for squash & drain on paper towels.

4 medium yellow squash
1 tsp salt
1 tsp pepper
1 tsp garlic powder
vegetable oil
all purpose flour
2 Tbsp sugar

Steps:

  • 1. Wash squash and slice into rounds. Place into bowl! Sprinkle salt,pepper and garlic powder on the squash!
  • 2. Take a large zip-lock bag or a grocery bag{paper sack}, and add flour to it! Enough to coat the squash while you shake it! Add squash and shake to coat all the squash! Remove squash and shake offloose flour!
  • 3. In a skillet add vegetable oil and heat to meadium high heat. when the oil is hot, add the squash and let fry up! In the last few minutes of cooking, sprinkle the sugar on the squash! It adds so much to this crispy fried veggie!
