24 pumpkin blossoms
1/2 c milk (regular, skim, whatever you like)
2 eggs
1/2 tsp salt or to your liking
1/8 tsp pepper or to your liking
2/3 c saltine crackers crumbs or yellow corn meal

CRISPY ZUCCHINI OR PUMPKIN BLOSSOMS

Crispy Zucchini or Pumpkin Blossoms image

My Italian grandmother makes these every year when the zucchini in her garden start to blossom. She is Sicilian and calls them 'cripelli.' It's sort of like a fritter and so yummy. As an alternative, you could also chop up the blossoms and mix them up in the batter and drop by teaspoons into the hot oil.

Tips:

  • Choose male pumpkin blossoms for frying, as they have a milder flavor and are less likely to contain seeds.
  • Remove the pistil and stamens from the center of the blossom to prevent a bitter taste and make it easier to stuff.
  • Gently wash the blossoms and pat them dry to avoid excess moisture.
  • Use a light hand when mixing the filling to avoid breaking the delicate blossoms.
  • Stuff the blossoms loosely to prevent them from bursting during frying.
  • Heat the oil to the correct temperature before frying to ensure even cooking and a crispy coating.
  • Fry the blossoms in small batches to avoid overcrowding and ensure they cook evenly.
  • Drain the blossoms on paper towels to remove excess oil and serve them while they are still warm and crispy.
