25 ounces canned chicken (or 2 cups cooked and shredded chicken)
8 ounces package cream cheese
2 tablespoons milk
salt and pepper to taste
2 tubes refrigerated crescent rolls
1 cup crushed croutons ((or panko bread crumbs, bread crumbs, and cracker crumbs can all be used))
1 stick butter (melted)
fresh or canned mushrooms
diced onions
chopped celery

Steps:

  • Blend together first four ingredients.
  • Separate crescent rolls into triangles.
  • Spoon chicken into the bottom of the triangle, fold in the bottom corners, and roll up.
  • Lightly roll in melted butter then roll in crushed croutons.
  • Place on un-greased cookie sheet and bake at 350 for 20 minutes.
  • If desired, serve with a sauce of cream of chicken soup diluted with 1/2 cup milk over the crescent rolls. I also like to add salt, pepper, parsley, cayenne, and curry to the sauce.

1 cup cooked, finely diced chicken ((or use canned chicken))
1 cup grated cheddar cheese, divided
1 (10.5 oz) can condensed cream of mushroom soup, NOT diluted
¼ cup milk
1 (8 oz) tube refrigerated crescent roll dough (8 count)

Steps:

  • Preheat oven to 350 degrees F.
  • In a bowl, stir together soup, milk and ½ cup of cheese. Pour into the bottom of an 8-inch square baking dish. Set aside.
  • In a separate bowl, combine chicken and remaining ½ cup of cheese.
  • Unroll crescent roll dough and separate into 8 triangles. Place about 1-2 heaping tablespoons of the chicken mixture on the wide end of each crescent roll. Roll the dough up and place each crescent roll (seam-side down) in the bottom of the dish.
  • Bake, uncovered, until the liquid is bubbly and the tops of the crescent rolls are browned (about 25 minutes). The bottom of the rolls (that are submerged in the sauce) will stay soft - like dumplings -- but will still be cooked through.

2 large Chicken Breasts; Shred
1 can Crescent Rolls
1 10.5 oz Cream of Chicken Soup
1/2 can of broth; Use cream of chicken can
1/2 can milk; Use cream of chicken can
1 tablespoon All purpose flour
6 oz shredded cheese
Pinch pepper and salt, for taste

Steps:

  • Place the chicken in a pot and cover with water, bring to a boil, reduce the heat to medium and cook till chicken is cooked through. Remove chicken, reserving the broth. When cooled enough to handle, remove the chicken from the bone and shred, set aside. Whisk together the soup, broth, milk, flour, salt and pepper. Unroll the crescent dough and separate into the triangles. Place a little cheese over the dough and at the larger end place a good heaping of the chicken. Roll up and place in a 9x13-inch casserole dish. Repeat with remaining. Once all are in the dish, pour the soup mix around each one and then drizzle a little over the tops (not too much). Bake in a 375°F oven for 25 minutes, remove and top with a little more cheese and return to the oven for 5 minutes. Let sit for a couple of minutes before serving, the soup mixture will thicken up like a gravy.

8 thin slices deli ham
4 slices provolone cheese or 4 slices mozzarella cheese, halved
2/3 cup seasoned bread crumbs
1/2 cup grated romano cheese or 1/2 cup parmesan cheese
1/4 cup minced fresh parsley
1/2 cup milk

Steps:

  • Flatten chicken to 1/4-inch thickness.
  • Place a slice of ham and cheese on each piece of chicken.
