MAMA'S BLACK-EYED PEA CASSEROLE BY EMERIL

Mama's Black-Eyed Pea Casserole by Emeril image

This is a recipe from Emeril Live during his "Football Contest" episode. It is really delicious. The only changes I made to it was to drain the diced tomatoes. The recipe doesn't state how many tortillas to use but I suggest using 5 on the bottom layer and 5 on the second layer. I used approx. 14 and that was to much for our taste. Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast): 2 1/2 tablespoons paprika 2 tablespoons salt 2 tablespoons garlic powder 1 tablespoon black pepper 1 tablespoon onion powder 1 tablespoon cayenne pepper 1 tablespoon dried oregano 1 tablespoon dried thyme Combine all ingredients thoroughly. Yield: 2/3 cup

Tips:

  • Use fresh ingredients: Fresh black-eyed peas have a sweeter, more delicate flavor than dried peas. If you're using dried peas, be sure to soak them overnight before cooking.
  • Cook the black-eyed peas until they're tender but still have a slight bite: Overcooked peas will be mushy and bland.
  • Don't skimp on the seasonings: The spices and herbs in this recipe are what give the casserole its flavor. Be sure to use fresh garlic and onion, and don't be afraid to add more spices to taste.
  • Use a variety of cheeses: The combination of cheddar, Parmesan, and mozzarella cheeses gives this casserole a rich, creamy flavor. You can also use other types of cheese, such as Gruyère or Swiss.
  • Top the casserole with bread crumbs or crushed crackers: This will give the casserole a crispy topping.

Conclusion:

Mama's Black-Eyed Pea Casserole is a delicious and easy-to-make dish that's perfect for any occasion. It's a great way to use up leftover black-eyed peas, and it's also a great dish to bring to a potluck or party. With its creamy, cheesy sauce and crispy topping, this casserole is sure to be a hit with everyone who tries it.
