There has seldom been a time in my life when a mason jar of this sauce wasn't in a corner of my mother or grandmother's refrigerator. The truth of the matter is, once you have had homemade you will go off the store-bought kind for good.

Yield makes about 6 1/2 cups

Number Of Ingredients 10

1 cup (2 sticks) unsalted butter
1 onion, preferably Vidalia, very finely chopped
2 1/2 cups ketchup
2 cups apple cider or distilled white vinegar
1/2 cup Worcestershire sauce
1/4 cup Dijon mustard
2 tablespoons firmly packed brown sugar
Juice of 2 lemons
2 tablespoons freshly ground black pepper
Coarse salt

Steps:

  • In a saucepan, melt the butter over medium heat; add the onions and simmer until soft and melted, 5 to 7 minutes. Add the ketchup, vinegar, Worcestershire sauce, mustard, brown sugar, lemon juice, and pepper.
  • Bring to a boil, decrease the heat to low, and simmer until the flavors have smoothed and mellowed, at least 10 and up to 30 minutes. Taste and adjust for seasoning with salt and pepper. Store in an airtight container in the refrigerator. It will last for months.

MOM'S BBQ SAUCE (FOR GRILLED RIBS)

Mom's BBQ Sauce (For Grilled Ribs) image

I thought I had lost this! I loved the smell of this cooking on the stove. It brings back memories of my parents and their friends making this when we spent summers in Long Beach Island, NJ. You can adjust for the amount of sauce you need. I just adjusted to make 2-3 cups for 2 packages of ribs (about 4-5 lbs.) and I used Splenda brown sugar for my husband.

Tips:

  • Choose the right tomatoes: Ripe, flavorful tomatoes are essential for a great barbecue sauce. Look for Roma or San Marzano tomatoes, which have a low water content and a high concentration of flavor.
  • Roast the tomatoes: Roasting the tomatoes before blending them adds a smoky, caramelized flavor to the sauce. You can roast the tomatoes in the oven or on the grill.
  • Use a variety of spices: Barbecue sauce is all about the spices. Experiment with different combinations of spices to find a flavor profile that you love. Some popular spices for barbecue sauce include chili powder, cumin, garlic powder, onion powder, paprika, and black pepper.
  • Add a touch of sweetness: A little bit of sweetness helps to balance out the acidity of the tomatoes and the spices. You can add sweetness to your barbecue sauce with brown sugar, honey, or molasses.
  • Let the sauce simmer: Simmering the sauce allows the flavors to meld and develop. The longer you simmer the sauce, the better it will taste.

Conclusion:

Mama's barbecue sauce is a delicious and versatile sauce that can be used on a variety of dishes. Whether you're grilling chicken, ribs, or vegetables, Mama's barbecue sauce will add a burst of flavor to your food. So next time you're looking for a great barbecue sauce, give Mama's recipe a try.
