MAMA MIA'S CAESAR SALAD
After a number of years of experimenting and tweaking, I believe that this recipe for Caesar Salad is the "best". From the dressing to the croutons, everything works together to deliver a perfectly balanced salad...garlicky, lemony, savory, yet bright...Everything a Caesar Salad should be!! You can always use store-bought croutons, however, the difference between homemade and store-bought croutons is unbelievable...and, they are easy to make and a good way to use up stale French bread. For the dressing, I feel that I have found the right balance of lemon, garlic, and olive oil. But, since it is all a matter of personal taste, feel free to adjust the amounts as you see fit. And, if you are concerned about using raw eggs, use pasteurized eggs instead.

- MAKING THE SALAD: Cut the head of Romaine lettuce lengthwise and then crosswise into 2-inch pieces. Wash and dry the lettuce thoroughly and place in a large bowl. Chill in the refrigerator while preparing the other ingredients.
- Immediately before serving, add about a 1/2 cup of the dressing to the lettuce. Toss until all the leaves are covered. Taste and add more dressing, if desired. Add the garlic-flavored croutons and toss again.
- Evenly divide the salad between 4 plates and sprinkle with the Parmesan cheese and top with 1 or 2 anchovy fillets, if desired.
- MAKING THE GARLIC-FLAVORED CROUTONS: Heat the oven to 350 degrees. Spread the bread cubes in a single file on a rimmed baking sheet. Bake until dry and barely golden, 10 to 12 minutes. Remove from oven and allow to cool slightly.
- Combine the olive oil, parsley and garlic in a small bowl. Sprinkle the salt over the bread and drizzle it with the olive oil mixture. Toss well to coat and return the pan to the oven. (You MUST bake the croutons twice! The first baking dries the bread and gives a little color. The second baking gets them crispy and golden. If you toss the bread cubes with the oil mixture and only bake once, the garlic will burn before the the bread gets crispy and golden). Bake until golden brown, about 10 minutes. Remove from the oven and cool. Store in an airtight container for up to 2 weeks, or freeze for 6 months (be sure to defrost before using). Makes about 10 cups.
- MAKING THE CAESAR DRESSING: In the bowl of a food processor, add the garlic, anchovies, salt, lemon juice, Worcestershire sauce, and mustard powder. (If whisking by hand, chop the garlic and anchovies before combining with the other ingredients). Pulse to combine. Add the egg yolks and pulse until blended and thickened.
- With the motor running, very slowly drizzle the oils through the feed tube until they are fully incorporated and the dressing is thick and emulsified. (Of course, you can always use an immersion blender or whisk the dressing by hand.).
- Transfer the dressing to a bowl and whisk in the Parmesan cheese and black pepper. Makes about 2 1/2 cups.

We had a delicious chicken dish at a local restaurant and we searched for recipes to taste like it. This seemed to do it. You can also substitute grilled filet mignon for "Filet Mignon Mama Mia" for a tasty and different grilled steak topping.

- Melt butter in large skillet.
- Add sliced mushrooms and cook for 3 minutes.
- Add mustard, ginger, salt, and pepper and cook for 2 minutes.
- Add sherry and only 2 T. balsamic vinegar along with the cream.
- Taste and add more balsamic vinegar if needed.
- Dissolve cornstarch into cold water and mix until smooth. Add to mushrooms and stir constantly until liquid comes to a boil. Continue cooking for one minute still stirring. This should now be a thickened sauce.
- Remove from heat and taste again. Add a last bit of balsamic if desired.
- Serve over grilled chicken, filet mignon, etc.

- Brown ground beef and Italian sausage in a large Dutch oven with a little olive oil, breaking up into small pieces. Remove meat and set aside. Pour all but a little (2 T) of the fat out of the pot and discard. In the remaining fat, sauté onions, garlic and parsley until onions are translucent. Deglaze pot with the red wine. Add tomato sauce, Worcestershire, mushrooms, and spices and bring to a boil. Reduce heat and simmer for at least an hour. Preheat the oven to 350 degrees. Spoon a little bit of the sauce into the bottom of a Lasagna Pan, just to prevent the pasta from sticking. Layer 1/3 of the noodles into the bottom of the pan. Cover the noodles with a 1/3 of the sauce. Continue with 1/3 of the sliced mozzarella, then sprinkle with parmesan, then dollops of ricotta finishing each layer with 1/3 of the grated mozzarella. Do this three times. Bake for 1 hour. Cooks Notes: • I have gotten into the habit of making the sauce the day before, just because it doesn't seem as daunting of a process, and then all you have to do the day of is assemble the layers. • The original recipe called for two boxes of Pasta, but I have found that I always have almost a full box left over after I've completely covered the surface of the pan 3 times. If you like to have pasta leftovers with a little butter and cheese then you can boil two boxes. • We all know that Lasagna is better the second day. With that in mind, I will sometimes bake it one day covered with foil and reheat it the day of the event, uncovered. - Cook Pasta "al dente" style. While Pasta is cooking, preheat oven to 350 degrees.
- Melt Butter in a large saucepan under medium heat. Stir in Flour, Salt and Pepper. Gradually add Milk; cook and stir until it thickens and slowly bubbles.
- Remove from heat; stir in 1 cup each Cheddar and Parmesan Cheese, blend until mixed well. Stir in Pasta.

- Cover and bake 25-30 minutes or until hot and bubbly.
- Uncover and sprinkle remaining Cheddar Cheese over the top. Serve after Cheese melts, about 5-10 minutes.

Steps:
- mix eggs, crumbled bread, small sliced onion, 1/4 cup parmesean cheese, salt & pepper as preferred and ground sirloin in a large mixing bowl till texture is consistent form 2" diameter meat balls (should yeild 15-18) pour 1/2 cups olive oil in a medium heat frying pan along with 1 thinly sliced garlic clove cook garlic till soft; not brown. add meatballs, turning till brown on the outside and juices are sealed (do not cook through; should be uncooked inside) remove from heat and hold till sauce is ready place diced tomatoes, can diced tomatoes, 1/4 cup basil, 1/4 cup oregano,6 cloves garlic (cut i half), salt & pepper to taste in a large pot over medium heat when sauce begins to bubble, reduce to low heat. add can tomato puree, 1/4 cup parmesean cheese stir thoroughly add meatballs cook for about an hour ( vegetables, & meat will slow-cook, sealing in flavor of the sauce add tomato paste, 1/4 tsp crushed red pepper, wine, 1/2 cup water and a pinch of nutmeg to the pot, stir frequently while sauce is cooking (nutmeg removes the acidity of the fresh tomatoes) boil pasta till al dente in water, 1 tbsp olive oil & pinch of salt. remove and drain pasta and place in large serving bowl add 1/2 cup sauce to the cooked pasta (it will prevent pasta from sticking and will uniformly add taste to the pasta prepare individual servings of pasta with sauce on top, a meatball & sausage liberally add grated cheese if desired. add a dollop of fresh riccotta cheese on top of the sauce for a special treat! serve with a nice caesar salad
