- Preheat the oven to 375 degrees F. Grease a 13- by 9-inch pan.
- For the filling: In a medium bowl, stir together the pecans, brown sugar and cinnamon until nicely combined and the pecans are fully coated.
- For the glaze: In a second medium bowl, whisk together the confectioners' sugar, lemon juice and milk until all the sugar is fully incorporated and there are no lumps. Set the glaze to the side.
- For the cake: Into a large bowl, add the cake mix, sour cream, vegetable oil, sugar, 1/4 cup water, flour and eggs. Using an electric mixer, beat the ingredients until fully combined, about 4 minutes. Pour about half of the batter into the prepared pan. Spread the pecan filling on top and swirl into the batter. Pour the next half of the batter over and spread to make an even layer.
- Bake until a toothpick inserted in the center comes out clean, about 30 minutes. Remove from the oven, place on a cooling rack and let cool in the pan for 30 minutes. Then invert the cake onto a plate or platter, and let cool completely.

- Cream the margarine and the sugar until light and fluffy. Whisk the eggs into the sugar/margarine mixture.
- Slowly add the flour (sieved), baking powder, orange zest and coconut. Stir in a figure of 8 fashion.
- Gradually add enough water to loosen the cake mix up a bit. It should be the consistency of a slightly thin custard.
- Pour into a non stick cake tin, preferably with loose bottom. I use an 8'' round tin for this cake.
- Bake on a middle/top shelf in the oven at 180 c for around 45 mins or until a skewer comes out clean.
- Remove from tin and cool on wire rack. Once cooled, top with the icing or dust with icing sugar.
- To make the icing, beat the margarine with the sugar & enough of the juice to form a spreadable icing. Cover the top of the cake & decorate with the jelly slices & dragees / silver balls.

- 1. Melt butter and chocolate; stir in sugar and milk. Heat till sugar melts and let it boil to soft ball 5-6 minutes. Add 1/2 t. vanilla. Stir till it's cool enough to put on cake. (It hardens fast!)
- 2. NOTE: I put the icing on the first and second layers when it is still a little runny. I pour it over the top when it starts to stay pretty well, so the top looks pretty. I put waxed paper under the edges of the cake, so when the icing drips down, I can pull it back up the sides. After you finish icing the sides of the cake, you can remove the waxed paper at the bottom, so the plate will be clean.

- Preheat oven to 375 degrees with a rack set in the center of the oven.
- Sift flour together with 3/4 cup sugar. Repeat process three times; set aside.
- In the bowl of an electric mixer fitted with the whisk attachment, beat egg whites, cream of tarter, and salt on medium speed until foamy. Add vanilla-bean seeds and almond extract. With the mixer on medium speed, slowly add remaining 3/4 cup sugar. Continue mixing until whites are glossy and stiff peaks form.
- Sift enough of the flour mixture over the egg white mixture to lightly dust the top. Gently fold flour mixture into the egg white mixture. Repeat process until all the flour is incorporated into the egg white mixture.
- Gently spoon batter into a 10-inch tube pan. With a spatula or knife, using a circular motion, cut through the batter twice to eliminate any large pockets of air. Smooth top to remove any large peaks.
- Transfer to oven and bake until golden brown and a cake tester inserted into the center comes out clean, 35 to 40 minutes. Invert pan over a bottle (such as a 2-liter soda bottle or wine bottle) until completely cooled, about 2 hours.
- To serve, set upright, and using a butter knife or a long spatula, loosen the cake from the sides of the pan. Invert onto a serving plate. Slice using a serrated knife or an angel food cake cutter; serve drizzled with bourbon creme anglaise, if desired.

MAMA DIP'S CARROT CAKE
This recipe is from Ms Mildred "Mama Dip" Council from Chapel Hill, NC. Her restaurat, Mama Dip's is the best soul food in the country and this cake is the best carrot cake ever tasted. My daughter, now 31yrs old has always requested carrot cake on her birthday and this year she got Mama Dip's and ate almost half the cake!!

- 1. Preheat oven to 350 degrees. You can either arrange plain walnuts in a single layer in a shallow pan and bake 12 minutes or until toasted or buy Blue Diamond candy coated walnuts (which is what I do)and not bake. Process walnuts until slightly ground.
- 2. Sift together flour, cinnamon and baking soda. Spray bottoms and sides of three 9-inch cake pans with cooking spray. Beat sugar and oil at medium speed until smooth. Add eggs, one at a time, beating until blended after each addition. Gradually add flour mixture, beating at low speed just until blended after each addition. Fold in carrots - you may also fold in 1 cup walnuts if desired. Bake 40 minutes or until wooden toothpick comes out clean. Cool in pans on wire rack 10 minutes, remove from pans and place back onto wire racks; let cool an additional hour or until completely cool.
- 3. Spread frosting over first layer, sprinkle with ground walnuts. Put second layer on top of first layer, spread with frosting and again sprinkle with the ground walnuts. Place third layer on top of second layer, spread with frosting both on top of cake and all around the sides. Sprinkle the top of the cake with the remaining ground walnuts.
- 4. MY ADDITION TO CREAM CHEESE FROSTING: I can never make a cream cheese frosting to taste any better than the store bought, so I always use the ones from the store BUT I add some Bailey's Irish Cream to the frosting - just enough to give it a slight tint of tan and not to runny. It gives the frosting an encredible taste!!

- 1. Preheat oven to 375. Lightly grease 8x8x2 square or 9x1-1/2" round cake pan.
- 2. Prepare strusel mixture by combining ingredients in a small bowl and mixing with a fork until crumbly.
