Big chewy pretzels like those sold in the mall! You may substitute garlic salt or cinnamon sugar for the coarse salt if you wish.

1 (.25 ounce) package active dry yeast
2 tablespoons brown sugar
1 ⅛ teaspoons salt
1 ½ cups warm water (110 degrees F/45 degrees C)
3 cups all-purpose flour
1 cup bread flour
2 cups warm water (110 degrees F/45 degrees C)
2 tablespoons baking soda
2 tablespoons butter, melted
2 tablespoons coarse kosher salt

Steps:

  • In a large mixing bowl, dissolve the yeast, brown sugar and salt in 1 1/2 cups warm water. Stir in flour, and knead dough on a floured surface until smooth and elastic, about 8 minutes. Place in a greased bowl, and turn to coat the surface. Cover, and let rise for one hour.
  • Combine 2 cups warm water and baking soda in an 8 inch square pan. Line 6 baking sheets with parchment paper.
  • After dough has risen, cut into 12 pieces. Roll each piece into a 3 foot rope, pencil thin or thinner. Twist into a pretzel shape, and dip into the baking soda solution. Place onto parchment covered baking sheets, and let rise 15 to 20 minutes.
  • Preheat an oven to 450 degrees F (230 degrees C).
  • Bake in the preheated oven for 8 to 10 minutes, or until golden brown. Brush with melted butter, and sprinkle with coarse salt, garlic salt or cinnamon sugar.

2 lbs boneless chicken thighs
1/2 cup water
1/4 cup low sodium soy sauce
1 tablespoon shaoxing wine
1/2 teaspoon granulated garlic powder
1/2 teaspoon baking soda
1/4 teaspoon pepper
2 tablespoons oil
5/8 cup unsalted chicken stock (1/2 cup and 2 tablespoons)
3 1/2 tablespoons teriyaki sauce
3 1/2 tablespoons brown sugar
1 tablespoon low sodium soy sauce
3/4 tablespoon cornstarch
3/4 tablespoon cold water
1/2 garlic clove, minced
1/2 teaspoon gingerroot

Steps:

  • Marinade:.
  • Slice the chicken into 2 inch slices.
  • Place chicken in a stand up mixer bowl.
  • Add the water, soy sauce, wine, garlic powder, baking soda, pepper and oil.
  • With the dough attachment, mix on low for about 30 minutes.
  • Place the chicken in the fridge to marinade over night.
  • Brown Sauce:.
  • In a saucepan, mix together chicken stock, teriyaki sauce, soy sauce, garlic, ginger, brown sugar, cornstarch.
  • Cook sauce over high heat while constantly stirring.
  • The sauce should thicken slightly only - when a spoon placed in the sauce, it coats the back of the spoon.
  • Strain out the garlic and ginger.
  • Cooking the Chicken:.
  • With a skillet on medium - high heat add 2 tablespoons of oil.
  • Once the oil is hot, add the chicken in one even layer, do not move the chicken around.
  • Cook for 3-4 minutes, then take a large spatula and flip the chicken and cook for another 3-4 minutes.
  • Add half of the sauce to chicken and mix well.
  • Serve hot with side of your choice (we like white rice) and the remaining sauce.

I have tried tons of recipes in my quest to duplicate "Auntie Anne's" pretzels. I found this one on the net, and it really tastes VERY similar to the real thing, best one so far. I have tried experimenting with add-ins and toppings. One of my faves is adding dried italian seasoning to the dough and sprinkling with parmesan cheese, garlic powder, and coarse salt, dipping

MALL-STYLE VEGETABLE STIR-FRY

The vegan chef Jenné Claiborne grew up in suburban Atlanta, where she developed a love for the teriyaki chicken stir-fry at Panda Express. After she became vegan, she recreated the flavors of her teen-age craving, using dates and soy sauce to produce the flavor of teriyaki sauce. If you don't have chickpeas on hand to add heft to the vegetables, replace them with tempeh, tofu, edamame, jackfruit or mushrooms. Also, feel free to swap out the broccoli in favor of another green vegetable like kale, cabbage or bok choy. To make a less salty, slightly less mall-like version, use low-sodium soy sauce or 1/4 cup soy sauce and 1/4 water or broth. You can also use low-sodium canned chickpeas (or soak and cook your own and salt to taste).

1 teaspoon grapeseed oil
1 1/2 tablespoons minced fresh ginger
2 garlic cloves, minced
1/2 cup soy sauce
3 tablespoons rice vinegar
1 teaspoon toasted sesame oil
6 Medjool or other dried dates, pitted and chopped
1 tablespoon arrowroot powder or cornstarch
1 tablespoon grapeseed or coconut oil
1/2 cup thinly sliced red onion, or 2 shallots, thinly sliced
1 red bell pepper, chopped or julienned
1 carrot, chopped or julienned
1 head broccoli, cut into bite-sized florets and pieces
1 1/2 cups cooked chickpeas (1 15-ounce can, drained and rinsed)
Freshly cooked brown rice, for serving
1 tablespoon sesame seeds (raw or toasted)
1 to 2 fresh limes, quartered
1/4 cup chopped fresh cilantro

Steps:

  • Make the sauce: In a saucepan, heat oil over medium heat. Add ginger and garlic, and cook, stirring, just until garlic starts to turn golden, about 1 minute. Stir in soy sauce, rice vinegar, sesame oil and dates. Let simmer 5 minutes.
  • Meanwhile, whisk arrowroot with 1/3 cup water until smooth. Slowly stir the mixture into the simmering sauce. When sauce begins to thicken (this will happen very quickly), remove from heat and set aside to cool.
  • When cool enough to handle, transfer sauce to a blender, and blend until smooth.
  • Make the stir-fry: In a wok or skillet with a lid, heat oil over medium heat. When hot, add onions. Stir-fry about 1 minute, until softened. Add red pepper and carrots, cover and cook 5 minutes, stirring occasionally. Stir in broccoli, chickpeas and sauce, and cook, covered, stirring occasionally, until vegetables are cooked to your liking, about 10 minutes.
  • Serve over rice, garnished with sesame seeds, fresh cilantro and lime wedges.

1 1/2 cups water
2 tablespoons instant yeast
2 tablespoons sugar
1 (3 1/2 ounce) package vanilla pudding mix
1/2 cup unsalted butter, melted
2 eggs
1 teaspoon salt
4 -5 cups bread flour
1 cup unsalted butter, softened
4 teaspoons cinnamon
2 cups brown sugar
8 ounces cream cheese
1/2 cup unsalted butter
1 teaspoon vanilla
3 cups confectioners' sugar
1 tablespoon milk

Steps:

  • In a small bowl, hand whisk the water and the yeast and let stand 2 to 3 minutes.
  • In the mixing bowl of an electric mixer, prepare pudding according to package directions.
  • Add butter, eggs, salt and mix well.
  • Add yeast mixture.
  • Blend and gradually add the flour, kneading on slowest speed of mixer, until dough is smooth (8 to 10 minutes).
  • Insert the bowl into a large plastic bag and let dough rise until doubled (45-60 minutes).
  • Gentle deflate dough in the bowl and shape into a ball, and let rise again.
  • Gently turn out onto a lightly floured board.
  • Then roll out on floured board to approximately 30" x 20".
  • Take 1 cup soft butter and spread over surface.
  • In bowl, mix 2 cups brown sugar and the cinnamon.
  • Sprinkle over top.
  • Roll up very tightly.
  • With knife, put a notch every 2".
  • Cut rolls with dental floss or a sharp knife.
  • Place rolls on a lightly greased cookie sheet (2 inches apart).
  • Lightly press down on each roll.
  • Cover and let rise until doubled.
  • Bake at 350 degrees for 15 to 20 minutes.
  • Remove rolls when they start to turn golden.
  • For Cream Cheese Frosting, combine all ingredients with a whisk, in a medium bowl, until smooth and soft.
  • Frost buns while they are still warm.

1 pound chicken leg or thigh meat, cut in bite size chunks
4 ounces soy sauce
1/2 cup brown sugar
1/2 teaspoon garlic powder
1 teaspoon powdered ginger
2 tablespoons dried minced onion
1/2 cup Jim Beam Bourbon Whiskey
2 tablespoons white wine

Steps:

  • Mix soy sauce, brown sugar, garlic powder, powdered ginger, dried minced onion, whiskey and white wine together and pour over chicken pieces in a bowl. Cover and refrigerate (stirring often) for several hours (best overnight). Bake chicken at 350°F. for one hour in a single layer with the marinade, basting every 10 minutes. Remove chicken. Scrape pan juices with all the brown bits into a frying pan. Heat, and add 2 tablespoons white wine. Stir and add chicken. Cook for 1 minute and serve.
