3 egg yolks
2 cloves garlic (minced)
4 chicken breast halves (boneless & skinless)
6 Tbsp. butter
1 c. Panko bread crumbs (Japanese bread crumbs)
1 c. grated Parmesan cheese
1 Tbsp. dried parsley
1 Tbsp. garlic powder
½ Tbsp. salt
1 Tbsp. ground black pepper
4 slices black forest ham
4 slices Swiss cheese
CREOLE MUSTARD SACUE:
2 tablespoons Grey Poupon Dijon mustard
3 tablespoons mayonnaise
1 teaspoon yellow mustard
1 teaspoon honey

Steps:

  • Mix together the creole mustard sauce ingredients and refrigerate.
  • In a small bowl, beat egg yolks with garlic. Place chicken and egg mixture in a large Ziploc bag, squeeze out all the air and seal tightly. Refrigerate for at least 4 hours, or overnight if possible.
  • Preheat oven to 400 degrees. Melt butter and pour into bottom of a 9x13 baking dish. Mix together the bread crumbs and Parmesan cheese, parsley, garlic powder, salt and pepper. Dip marinated chicken in crumb mixture. Place coated chicken in baking dish, and pour remaining egg mixture over the top.
  • Bake for 15 min on each side or until chicken is no longer pink and juices run clear. Top each piece of chicken with ham and slice of Swiss cheese. Place back in the oven for about 5 min or until cheese is melted. Remove from oven and serve with Creole Mustard Sauce.
  • These also make GREAT sandwiches or wraps the next day, just cut it into strips.

4 chicken breasts
5 egg yolks
3 tablespoons garlic, Minced
1 cup panko breadcrumbs
1 cup parmesan cheese
1 tablespoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
8 ham slices, thinly sliced
4 slices swiss cheese
2 tablespoons Grey Poupon mustard
3 tablespoons mayonnaise
1 teaspoon yellow mustard
1 teaspoon honey

Steps:

  • Combine Egg Yolk and garlic and pour into plastic bag. Place chicken inside of bag, seal shut making sure no extra air is inside, and make sure the chicken gets coated with egg yoke/garlic mixture. Place in fridge and marinate chicken for 4 hours.
  • In a medium bowl, mix Panko, Parmesan cheese, garlic powder, salt and pepper and dump evenly in the bottom of a 9 X 13 baking dish.
  • Remove chicken from bag, place chicken in baking dish. Coat chicken with mixture and bake at 350 degrees F and depending on the size of your chicken breasts, cook for 40 minutes to one hour or until chicken is cooked through. Monitor it starting at 40 minutes.
  • Place one slice of ham and one slice of swiss cheese over the top of each piece of chicken and bake additional two minutes until cheese is melted.
  • Malibu Dipping Sauce - Combine Grey Poupon mustard, Mayo, yellow mustard and honey in small bowl. Stir to make sure all ingredients are evenly combined. Use to dip chicken inches Enjoy!

Normally I would fry the chicken breast like I would my fried chicken but I wanted to do something different this time. I switched up some ingredients and baked it. It turned out delicious! The mayo/mustard dipping sauce served along side will remind you of a similar version Sizzler had way back when.

4 boneless chicken breast
1 large egg
1/4 c milk
1/8 tsp garlic powder
1/8 tsp onion powder
1/8 tsp pepper
1 c crushed french fried onions
12 crushed buttery round crackers
4 slices deli ham
4 slices swiss cheese
2 Tbsp mayo
1 Tbsp yellow mustard

Steps:

  • 1. Whisk together the egg, milk and seasoning in a bowl big enough to dip the chicken in. Place the onions and crackers on a plate and combine. Dip the chicken into the egg mixture then press into the cracker mixture on both sides. Place the chicken on a baking sheet lined with tinfoil and lightly greased. Bake in a 350 degree oven for 30 minutes. Remove and top with the ham and cheese. Return to the oven for 5-7 minutes for the cheese to get nice and melted.
  • 2. Whisk together the mayo and mustard. Keep refrigerated until ready to serve.

6 boneless skinless chicken breasts (pound 'em thin)
6 slices cooked ham
6 slices swiss cheese
1 egg
1/4 cup flour
1/4 teaspoon salt
1/8 teaspoon pepper
3/4 cup fine dry breadcrumb
2 tablespoons vegetable oil
2 tablespoons butter
1 tablespoon water
1 teaspoon mustard
1/4 cup mayonnaise

Steps:

  • Stir egg and 1 tablespoons water together with a fork.
  • Combine flour, salt and pepper and coat each chicken piece, dip into egg mixture and then coat with breadcrumbs making sure to press crumbs in firmly.
  • Heat oil and butter in large skillet over medium heat.
  • Brown chicken 4 to 5 minutes on each side.

1/2 cup honey Dijon mustard, divided
4 thin slices deli ham
4 slices reduced-fat Swiss cheese
1 can (8 ounces) unsweetened crushed pineapple, well drained
1-1/2 cups panko bread crumbs
1/4 teaspoon salt
1/4 teaspoon pepper
SAUCE:
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
