Combining two mealtime classics into this casserole was a success for Dorothy Leone. Sloppy Joe Macaroni and Cheese is a hit in her Meredith, New Hampshire home. "My grandchildren love it," she says. "It's so versatile, too. Instead of the sloppy joe mix, I sometimes add taco seasoning, and I've also experimented with the other ingredients. But I do hope you can lighten it up a bit."

Tips:

  • Choose the right macaroni. Elbow macaroni is the classic choice for mac and cheese, but you can also use other shapes like shells, penne, or rotini.
  • Cook the macaroni al dente. This means cooking it until it is tender but still has a slight bite to it. Overcooked macaroni will be mushy and not hold its shape.
  • Use a good quality cheese. The cheese is the star of the show in mac and cheese, so don't skimp on quality. Use a sharp cheddar cheese that is well-aged and has a strong flavor.
  • Make a roux. A roux is a mixture of butter and flour that is used to thicken the sauce. It helps to create a smooth and creamy texture.
  • Season the sauce to taste. Add salt, pepper, and other spices to taste. You can also add a dash of cayenne pepper for a little bit of heat.
  • Stir in the macaroni and cheese. Once the sauce is thickened, stir in the macaroni and cheese. Make sure to coat all of the macaroni with the sauce.
  • Top with more cheese and bake. Before baking, top the mac and cheese with more cheese. This will help to create a golden brown crust.
  • Let it rest before serving. Once the mac and cheese is baked, let it rest for a few minutes before serving. This will help to set the cheese and make it easier to serve.

Conclusion:

Sloppy Joe mac and cheese is a delicious and easy-to-make dish that is perfect for a quick and easy meal. It is also a great way to use up leftover sloppy Joes. With a few simple tips, you can make the perfect sloppy Joe mac and cheese that your family and friends will love.
