This is a delicious quiche. Another one of those church cookbooks, from Georgia, had this winning recipe.

1 (12 ounce) package frozen prepared spinach souffle, thawed
2 eggs, slightly beaten
3 tablespoons milk
2 teaspoons chopped onions
1 (4 1/2 ounce) jar sliced mushrooms, drained
3/4 cup cooked sausage, crumbled
3/4 cup cheddar cheese, grated
1 unbaked 9-inch pie crust

Steps:

  • Preheat the oven to 400 degrees.
  • In a large mixing bowl, combine spinach souffle, eggs, milk onion, mushrooms, sausage and cheese. Mix thoroughly.
  • Pour the mixture into the unbaked pie crust.
  • Put a baking sheet on the bottom oven rack. Place quiche on the middle rack of the oven. Bake 30-35 minutes, or until a knife inserted in center comes out clean.

A cheesy fluffy goodness that the whole family LOVES!!! I always make Two, all the way for Mom and I and a meat & cheese version for the young Wentzes....mmmmmm good.

6 medium eggs
8 oz whipping cream
1 small yellow onion diced
1 pkg 10 oz frozen chopped spinach
6 oz grated swiss cheese
1 tsp salt
1 tsp black pepper
1 tsp cayenne pepper
1 pkg 9 inch deep dish pie crust
4 pinch grated asiago cheese
10 slice oscar meyer center cut bacon (or your favorite)

Steps:

  • 1. preheat oven to 425*. line a baking pan with 10-12 slices of your favorite bacon (I use Oscar Meyer center cut) bake at 400* for 12-14 minutes. While bacon is cooking prepare your chopped spinach in the microwave per package instructions, remove and carefully squeeze out excess water and place in a dish at your station. Remove bacon from oven and place slices on a paper towel to drain, use kitchen shears and cut into small pieces.
  • 2. remove frozen pie crust from freezer and place at your work station while you chop and dice the onion. Go ahead now and grate your swiss cheese(on wax paper for ease of transport) in a medium bowl slightly beat the 6 eggs add your salt, pepper, cayenne and whipping cream mix lightly. place the diced onion in the bottom of your pie crust, followed by the cut bacon, then layered with the chopped spinach. Place your grated swiss on top of the spinach, then carefully pour your egg mixture over the top, slowly to allow absorption. sprinkle top with asiago cheese.
  • 3. place your Quiche in pre-heated 425* oven for 15 minutes, at the end of 15 minutes reduce heat to 325* and bake an additional 25-30 minutes until tops are a golden brown
  • 4. remove from oven allow to rest for 10-15 minutes before slicing. Slice, Plate and ENJOY mmmmmm GOOD!! Recipe is for "One" Quiche in my photos I was making the Kids Quiche as well (with sausage and cheddar)

This is an adaptation of a recipe that was given to me by a friend a couple of decades ago when I was a newlywed. It is still one of my family's favorites. It is great to pull out of the freezer when I don't have time to cook.

1 1/2 lbs ground beef
2 9-inch deep dish pie crusts, unbaked
1/2 cup sliced fresh mushrooms, any kind
1/2 cup chopped fresh broccoli
1/2 cup chopped canned artichoke heart
1 cup shredded fresh parmesan cheese
1 cup shredded mild cheddar cheese
2 teaspoons onion powder
1/2 teaspoon garlic salt
1/2 teaspoon onion salt
1 teaspoon seasoning salt
6 eggs
2 cups whipping cream

Steps:

  • Bake pie crusts 5 minutes at 425 degrees F.
  • Brown meat and drain well.
  • Steam broccoli and mushrooms.
  • Mix broccoli, mushrooms, artichokes and meat together and spread in pie shell.
  • Sprinkle Parmesan and Cheddar cheeses over meat and vegetable mixture in shells.
  • Beat eggs, cream and seasonings together and pour over meat pie filling.
  • Bake at 425 degrees F.
  • for 15 minutes then reduce heat to 300 degrees F.
  • and bake 35 minutes more.
  • This makes two quiches so there is an extra one to freeze or share with another real man!
