20 corn tortillas
1 16 oz can refried beans

1 pound ground pork (or chorizo sausage , raw)
1 onion (chopped)
2 garlic cloves (minced)
1 tablespoon olive oil
1 (16-ounce) bottle taco sauce
1 (8-ounce) can tomato sauce
1 tablespoon chili powder
1/8 teaspoon cayenne pepper
1/4 teaspoon pepper
1 (4-ounce) can green chilies (drained)
2 (13.8-ounce) cans pizza dough (or enough pizza dough for 2 pizzas)
Cooking spray
4 cups Colby-Jack cheese (or Monterey Jack cheese, shredded)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 400 F. Arrange the racks in the oven so they evenly divide the oven into thirds. You'll use both racks, rotating and moving the pizzas around as they cook.
  • In a large skillet, cook the pork with onion and garlic in olive oil over medium heat until the meat is browned, stirring to break up with a fork. Drain if necessary. Make sure that the crusts are browned on the bottom and the pizzas have cooked evenly.

2 cups monterey jack cheese
2 cups chicken or 2 cups beef
1 (4 ounce) can chilies
2 jalapenos or 2 chipotle chiles in adobo, diced
1 can pitted black olives, sliced (or green if you like)
2 thinly sliced tomatoes
1 cup salsa
1 small red onion, sliced into thin rings
2 teaspoons milk
1 container sour cream, milk whisked in
guacamole

1 pound ground beef
1 (1.25 ounce) package taco seasoning mix
1 tablespoon vegetable oil
4 (6 inch) corn tortillas
8 ounces shredded Cheddar cheese
8 tablespoons sour cream
2 roma (plum) tomatoes, chopped
2 green onion, chopped
1 (4 ounce) can diced green chiles, drained
½ avocado, diced
1 tablespoon black olives, sliced

Steps:

  • Heat the refried beans.
  • In a large skillet, brown the ground beef. Stir in the seasoning packet.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place a small amount of vegetable oil in a large skillet. Let the oil heat, then place one corn tortilla in the skillet. After 15 seconds, flip the tortilla over and let it fry another 15 seconds. Repeat this process with the remaining tortillas, letting them drain on paper towels once they have been heated. 1 (8 1/2 ounce) package 8-inch flour tortillas
1 (10 ounce) can enchilada sauce
1 (10 ounce) can diced tomatoes with mild green chilies
1 lb ground beef
1 (8 ounce) package taco seasoning
1 (15 ounce) can refried beans
1 (8 ounce) bag Mexican blend cheese
2 stalks green onions, chopped

Steps:

  • Prepare taco meat per package directions.
  • Warm refried beans.
  • Prepare a small amount of oil in pan to 375°F (do not put so much that it will cover the flour tortillas).
  • Cook flour tortilla's at 375°F for 30-45 seconds or until just golden brown.
  • Drain on paper towels.
